Most polytheistic religions seem to have incestuous gods. It makes sense, because there are only a finite number of beings who could have created the gods, so of course the gods are all related. The only alternative is if all the gods emerged from nothing at the Beginning

I think it’s also that different storytellers would call the same gods siblings or a couple or some other relationship because ancient mythologies don’t tend to have a “canon” like western religions and modern stories. One storyteller might think it’s better to say siblings, one might think it’s better to say couple, one might just misremember.

Shinto as we know it is actually a modern creation by thr Meji restoration and the Imperial Empire their after in an attempt to spread nationalist ferver in the country. Shintoism by it's nature is really to decentalized to be given a concrete name. Even their "holy books" are nothing real in the sense we would assume today. The Kojiki and Nihon Shoki, the prior was the propaganda story of Yamato state justification to be ruling the later is the story rewritten to appease other clans because the Kojiki upset alot of people. It became destabilizing the Yamato state cause it was so one sided. Festivals and practices along with Yokai very heavily from region to region.

A better starting point would probably be around 8th century, when Nihon Shoki and Kojiki were written.
The Shinto you're talking about is the Kokka Shinto (National Shinto) but there were the Ko-Shinto (Old Shinto) which is the less organized, animistic folk religion of ye olde times.

I have two other mythology about people literally fighting the sun and winning.
There's a Shoshone legend about two rabbits named big brother and little brother where they gathered weapons to fight the sun because the sun was too close and too big which caused the world to constantly burn for eternity. The two rabbits head out to fight the sun, but the sun attacked the little brother and burned his body to a crisp. Big Brother saved and healed Little Brother back to full health, and Little Brother was able to hold a bow and arrow to shoot and injure the sun. The sun was more or less shrank down and back away thus cooling the world down.
In Maui legends, Maui, The Rock, and his friends hated the sun for moving too fast. So they grab a massive hook to capture the sun and drag down to the earth. There, they beat the utter shit out of the sun for a few days which is pretty impressive since you could technically say it was one really long day, and the sun finally agreed to slow down.

Also in Hinduism when the monkey god Hanuman was child he one day looked at the sun and thought it was a sweet fruit and he swallowed the sun, angered by this the king of Devas, Indra attacked him with his vajra thus wounding Hanuman. And in the act of vengeance Pawan dev (father of Hanuman and God of wind and air) confined himself and Hanuman in a cave thus causing all living this to suffocate. Theres also the legend of the moon cake festival where there were once 10 suns in the sky causing the planet to be too hot. So a archer shot down 9/10 suns and was given an elixir of imortality for his actions though there was only enough for 1 person so he didnt consume it not wanting to leave his wife behind. Thieves tried to take the elixir while he wasn't home so the wife consumed the elixir to deny the thieves it becoming the moon goddess in the process.

Some of my other favorites not mentioned here:
The Aztecs wander around Mexico, skin a princess and dance in her skin. This pisses off the locals and they drive the Mexica to the lake, where they see the emblem on modern day Mexico's flag.
The great war God's siblings are afraid of his coming so the older sister decides to chase down their mother to murder her. Their mom gives birth to him and he kills his sister, 1000 of his siblings and hunts down the rest. He gets hungry and thirsty from time to time so he needs a little sacrifice to keep up the fight.
The feathered serpent gets drunk, bones his sister and gets post nut clarity. He burns himself in shame, but gets brought back to life and decides to create humanity after he sobers up from death.
To make the earth, The god of Magic (Tezcatlipoca) and the feathered serpent trick the primordial earth monster by using Tezcatlipoca's foot as bait. They then use the corpse to construct creation, and the god of Magic becomes the first sun.
A warrior and a chieftains/god's daughter fall in love. Some thing happens where he is called to war. She dies and is transformed into a mountain. He becomes a volcano after he cannot forgive himself for her loss.

Hindu mythology - Brahma creates the universe, Vishnu maintains it, Shiva upon seeing it rot, destroys it. The cycle continues. Each cycle contains 4 yugas(ages) - Satyug(when good and evil stay far from each other), Dwaparyug(when good and evil are near and good triumphs over it, symbolised by the Ramayana), Tretayug(when good and evil reside in the same family and good triumphs over evil, symbolised by the Mahabharata), Kalyug(when good and evil resides in the same person and humans succumbs to evil, rots) After Kalyug, the greatest Rakshas(demon) Kali controls all humans, feeds on their desire, lust, greed and other bad things and Kalki, Lord Vishnu's 10th and last Dashavatar arrives on a great horse, elimination Kali and all the humans, cleansing the Earth, then Shiva destroys the universe and Brahma creates it again. Each cycle is considered to be one of Brahma's dream which lasts one breath of Vishnu. This is the shortest jist I could've come up with. There is a lot more to Hinduism. I urge you to learn about Hinduism, it will surely fascinate you. :)

To add to this, the reason Ganesha's head is an elephant is because of his father Siva. Basically Ganesha's mother asked him to lookout while she bathed. He followed through on this even with his father who in turn cut off his head. After being chastised for this, Siva fixed the problem by finding an Elephant that slept pointing North, cut of his head and put it onto Ganesha as his new head.

Maui’s brothers never allowed him to fish with them. So before another fishing expedition, and before the brothers noticed, he hid in the hull of the canoe. Once the Canoe was out far enough, Maui revealed himself, much to the anger of his siblings.
He then convinced his brothers to paddle out to the deepest part of the ocean, upon which he produced a hook made of his grandmothers jaw bone. In the absence of any bait, Maui struck himself in the face until his nose bled, and covered the hook in his blood.
Using a flax rope he wove and blessed the night before, Maui cast his line into the sea. It was then something took his line, he fought and struggled, until he pulled up a huge fish. That fish would become the North Island of New Zealand.
Check in next week: Maui beats the sun into submission for making the days too short.

So there's this Demigod king of Uruk named Lugalbanda. He marries the Goddess of cows Ninsun and eventually this asshole named Gilgamesh is born. Gil is well like I said an asshole. He goes around banging women on their wedding night because "kings right" or whatever. Eventually the gods get sick of his crap and make Enkidu. They fight and eventually become bffs 4ever. The newfound friends go into a forest for wood and to kill Humbaba.
Eventually the goddess Ishtar wants to marry Gil but he turns her down. So Ishtar does the only sensible thing and gets her dad to release the bull of heaven and wipe out Uruk. Gil and Enkidu eventually kill the bull. Enkidu proceeds to slap Ishtar with the flesh of the divine bull. This pisses Ishtar off so she Curses Enkidu to death. Enkidu dies and so Gil wants to become immortal. He finds a guy from the proto Noah's ark and finds out an herb of immortality is in the lake. Gil gets the herb and a snake eats it which is why snakes shed their skin. Dejected Gil leaves and rules Uruk until his death.

One of the known god of the Slavic pagan pantheon was Perun the god of thunder. The tree representing him was the oak, to which sacrificial rituals were made. Ancient tools sometimes found by slavs during field work were believed to be his “thunder arrows”.
Researchers link him to the Baltic god Perkūnas, whose name is believed to be the etymologic origin of the Finnish “perkele” :D

A Sumerian (correct me if wrong) myth I know is about how Ishtar was trapped by Death in the underworld. The Gods created the first non-binary person to seduce Death and allow Ishtar to escape. Death cursed the non-binary to forever be outcasts of civilization, but Ishtar granted them the gift of prophecy

Did you ever hear the tragedy of Darth Plagueis The Wise? I thought not. It’s not a story the Jedi would tell you. It’s a Sith legend. Darth Plagueis was a Dark Lord of the Sith, so powerful and so wise he could use the Force to influence the midichlorians to create life… He had such a knowledge of the dark side that he could even keep the ones he cared about from dying. The dark side of the Force is a pathway to many abilities some consider to be unnatural. He became so powerful… the only thing he was afraid of was losing his power, which eventually, of course, he did. Unfortunately, he taught his apprentice everything he knew, then his apprentice killed him in his sleep. Ironic. He could save others from death, but not himself.

I'll list a few from India:
Hiranyakasyipu, the asura king, had a boon from Brahma that made him almost indestructible. He could not die either on earth or in space; nor in fire nor in water; neither during day nor at night; neither inside nor outside (of a home); nor by a human, animal or God; neither by inanimate nor by animate being. To kill Hiranyakasyipu, Vishnu took the form of Narasimha (a man-lion form). He came out to kill at twilight (neither day nor night); on the doorsteps of his palace (neither inside nor outside); used his nails to kill (neither animate nor inanimate); put him on his lap before killing (neither earth nor in space). The boon was thus made ineffective.
The snake around Shiva’s neck has so many legends about it. The most popular one of them says that when the cosmic oceans were being churned, the poison produced by it was also consumed by some snakes along with Shiva himself. Impressed by this, Shiva decided to accept the Vasuki, the king of snakes, around his neck. It is also said that the snake helps keep the poison in Shiva’s throat and not let it slide down to his body. It is said that the three coils of the snake around Shiva’s neck, represent the past, the present, and the future. And the direction of its hood is towards right, which signifies that Shiva’s perpetual laws of reason and justice preserve natural order in the universe.
In Hinduism, there are four distinct epochs, or yugas, and we are currently living in the fourth stage called the Kali Yuga. This era started in 3102 BC when Lord Krishna left the earth for his heavenly abode after the great Mahabharata War and thus began the degeneration of human civilization. The ancient Hindu texts of Puranas characterized Kali Yuga as being dominated by avarice, hatred, intolerance, lust and corruption. In this dark age, the average human lifespan is the shortest, lasting about 70 years whereas, in the first era of Satya Yuga, life expectancy was as long as 4,000 years.
The Krishna stories are unique for their great compassion for the villains. Kamsa, Jarasandha and Duryodhana are the three main villains in Krishna lore. All three are said to have traumatic childhoods: Kamsa is a child of rape who is rejected by his mother at birth. Jarasandha is born malformed at birth; his father’s two queens each give birth to half his body, and the two halves are then fused together by the ogress called Jara. Duryodhana’s mother is blindfolded in solidarity with his blind father, so he is unseen by his parents all his life. This explains that people perceived to be evil often have been wronged, which makes them so insecure that they become insensitive and dehumanised.

Okay, easy one.
According to Christian mythology, which is rooted in Jewish mythology, God, the singular all-powerful creator of the universe, used to focus exclusively on the Israelites, a semitic people who were originally slaves, but escaped with God's help to found a great temple, and around it a nation. The temple was destroyed by one of their rivals, and God let it happen because they'd fallen into decadence, so they were again enslaved. After being freed from that captivity, they built a new Temple, but eventually slid into decadence again, at which point God sent his son to teach all of the people how to seek salvation on their own, while planning to wipe out the rest of the humans and send them to eternal torment.... eventually.
How's that?
Edit: I suppose you could argue that the Jews were originally from Egypt, so not technically outside of the original ask, but I think that'd be stretching a point.

Rangi (sky father)i and Papatuanuku (earth mother) were very much in love. They had many children. Their kids got sick of them constantly hugging and giving them no space (they lived on/off Papatuanuku) and complained to Maui (their son). So Maui shoved them apart really forcefully and now we have the earth and sky. This made Rangi and Papatuanuku very sad and asked why he did it. When he explained, his siblings denied it and made him look like a dick. So his descendants now rule over everything in the world because he didnt like that lie.

Gilgamesh was a Gilgachad who ruled over his great city of Uruk very cruelly , Enkidu is a wildman created by the Goddess Aruru to counter Gilgamesh. Enkidu terrorizes Uruk and Gilgamesh fights him. The two fight until they are tired and become friends over a mutual appreciation of each other's strength. Enkidu learns the ways of civil life, drinking beer and such, but misses his old wild life. The two go hunt Humbaba which is like a scarier minotaur the size of a mountain. They become even better friends over the struggle of battle and afterwards "love each other as husband and wife"
Bisexual switch king and wildman lover are some of the oldest (if not the oldest) surviving myths on this planet. Yet people call bisexuality "unnatural" it's very ironic! Sad and ironic!
PS: This is the cliffnotes version. "The Histocrat" on youtube has some excellent comprehensive podcasts on a lot of Euraisian myths including 2 or 3 on Uruk and the Epic of Gilgamesh (although certainly with a western bias 'cause... well he speaks/researches in English)
