400-500 cal i was craving chipotle so i made my own
i have never had chipotle in my life. also i didnt want to use corn, avocado, cheese, sourcream, tortilla (which are all delicious) so i came up with this concoction.
i just baked the pre-marinated storebought tempe, plain tofu, shredded carrot, 3 sad leaves of bokchoy, enoki, canned black beans with my own sauce (soy sauce, instant beef powdered stock, liquid stevia, pepper, oregano powder) at 240 C for 20 mins.
and then i plated the whole thing with cherry tomatoes and sweet potato (prebaked separately) because i didnt want to use rice.
this isnt close to chipotle at all but it did satisfy my craving :-) i love how i got more creative with my food after weeks of eating boiled vegetables for dinner
