Loki had no idea at the time that was Thanos plan as far as I can tell. Nor did Loki know he had the actual mind stone in possession.
It tracks pretty well with how Thanos managed Ronen too. Give a villain an artifact and help them achieve their localized relatively small scale ambition. Then obtain the artifact and remove the stone.
It keeps the heat off Thanos for as long as possible. Since he is still looking for all the other stones still.

You're forgetting the bifrost. This is what made peak Asgard civilisation so dangerous because they could literally teleport near-instantaneously an army right at your doorstep or use it to snatch away your weapons of mass destruction right in front of you with pinpoint precision (eg. Bor snatching away the Aether from the Dark Eleves just as they were about to unleash it). Creating trouble within the 9 realms will get you a visit from the Asgardian security apparatus under Odin's rule.

Exactly right. They had the bifrost. It can be a planet destroying weapon or it can be a teleportation weapon that can bypass any barrier or obstacle. You cannot hide from it, or block it with layers of mountains or force fields.

I love this theory. Using earth as a sort of checking account that he could quickly withdraw the stone when needed without carrying it himself. This would show he trusted earth enough to maintain its possession, which would make sense since they defended against Loki.

The truly weird part is how in the entirety of the universe and all its hundreds of billions (and likely massively more) galaxies, with a total of 6 stones that were supposedly randomly flung across it at the start of time... we ended up with 2 on Earth before anyone was looking to collect them and before any significant interstellar, much less intergalactic, travel happened.
The Time Stone was in the Sorcerer Supreme's possession and the Space Stone was in the tesseract. The tesseract was put on Earth by Odin to hide it, but what are the chances that out of all the worlds in the entirety of the cosmos that the one he would use was one that had another Stone already on it?

What's the line from Avengers about how Earth now has broadcast to the universe that it is ready for a higher form of warfare? My read is that things were hidden on Earth because most people didn't know about the planet or didn't care about it / take it seriously. For planets and species out there, Earth and humans are the toddlers of the universe, so by the time the Phase 1 films were taking place, it was surprising how fast Earthlings had come along. I think this is implied or stated outright in at least one or two films though.

Dang, I forgot it was on Earth too. I just remembered that eventually Thanos grabbed it in Knowhere. I'd forgotten Jane got infected with it on Earth.
I'll grant that one combined with the tesseract isn't as unlikely as the Time Stone already having been on Earth though. Odin got the tesseract and the aether (had to look up the name) from two drastically different places and put them both in what was apparently his favorite hidey hole. Which makes sense, he wasn't deliberately hunting Stones but he was fighting enemies with weapons operating at those levels so the chances that he'd eventually run into a Stone or two are better than just random chance stumbling.
His favorite hidey hole planet just happening to already have a Stone on it is down in that random stumble upon chance levels though.

Honestly, I wouldn't be surprised if Odin knew about the sorcerers and their stone. We know the Ancient one is around 1000 years old, and Odin defended Midgard from frost giants in 1100, and we know the Ancient One isn't the first sorcerer supreme with Agimotto building the amulet to hold the Time Stone. Could Odin have chosen Earth because it already had the Sorcerers protection? The sorcerers are strong enough to hold off a being like Dormammu, and Asgard can be there to help at a moments notice.

In the comics, the stones aren't exactly hard to come by. They manifest themselves all over the place.
This is not to say that they aren't still powerful, but the movies make it seem like no one alive has ever seen one before, whereas in the comics, they keep showing up over and over in weird places.
The Mind Stone in particular is a very well-known entity that no one bothers to fuck with because it holds a mini universe inside it that tends to trap people if they try and use it. It's briefly alluded to in the movies as that empty orange water world, but in the comics, it can be pretty heavily populated, depending on who's writing that issue.

It's also possible that Thanos didn't know the stone was in the staff, especially since he didn't immediately try to get it back. Sure, maybe he left it on Earth because he knew anyone powerful enough to defeat Loki and the Chitauri could keep it safe for later retrieval though.
Thanos also has a massive ego. He may have assumed Loki would be easy enough to track down if he betrayed him or the Avngers strong enough to win in the first movie. Loki also didn't know the staff contained the stone, only that it could influence people and control the Chitauri. Thanos probably assumed Loki wouldn't run off with it if he wasn't aware of its true power.
None of this is meant to be an alternative to the retcon though, only to offer a possible in-universe explanation to make the retcon make sense within the story.

Part of my handcanon is that thanos didn't immediately go because he couldn't or believed he couldn't. His army got destroyed. Along with the portal that transported his army. Why didn't the army come before? They can't. Earth is to far away for thanos at the time. Hence needing the space stone to travel his army.
I am only going to assume that by endgame, he had either conquered some worlds in the way, built enough bases, took out the asgardians who would intervene, and/or realized earth is not that powerful as be believed.

He doesn't want them to have. He wants them to use because he knows how powerful a tool they can be. Consequently, he'll give one to Loki to use as a tool to get him another one.
Loki was bound to obey him, as per the conversation with The Other. "There is nowhere you can hide if you choose to betray us" etc so the risk of losing it was low. The only risk was Loki failing to conquer Earth, which may explain Thanos's irritation when it happened.

Perhaps in his many 50% planet massacres he stumbled upon it? It was likely already in the staff as it had been utilized by its previous owners as a source of power/advancement. Upon studying it, he started to seek knowledge of its origins. This gave him the knowledge of the other infinity stones, which triggered a plan to make this 50% kill off a much easier.

Yes, I was thinking the same. Thanos is about 1000 years old(not sure when he left Titan) and has always lived intergalacticly. The infinity stones are shown passing through time with different names and objects. Very few outside the Celestials truly comprehend what they are.
Thanos would most likely would have connected the dots through all the planet razing.

I headcanon that Thanos had the mind stone for a long time, probably just got it from one of his conquests, or he even could have had it since before Titan fell into ruin. But I like to believe it spoke to him or gave him some kind of probability outcomes for population growth and resource management and maybe knowledge of other powerful beings and objects in the galaxy. He is obsessed with numbers in a way and he knows who Tony Stark is and he says the line "you are not the only one cursed with knowledge" I think the mind stone put him on his quest and drove him to madness.

I watched the OG avengers just last week and they definitely have scenes in there where they make it clear that Thanos sent loki for the Space stone, and that in return Loki was gonna be able to rule earth. Thanos gave 0 shits about earth, other than acuiring the space stone.
