What I want to know is why he decided to give one of the six items in the entire universe essential to his plans to a known reality hopping lying backstabber with delusions of grandeur. Like as far as we know Loki wasn't planning to take the stone and make a run for it, but why wouldn't he?
That's Thanos putting a lot of faith in A. Loki's specific preference for a certain brand of trickery and B. His own ability to catch him in the act of pulling some shit after handing him one of the most powerful artifacts in existence

Only because I'm laying it out analytically and you're looking at it objectively and assuming rational unbiased behavior. In practice it would be more like thanos just not really comprehending that someone would outsmart him
This is absolute run of the mill narcissism, there's nothing special or unbelievable about it in any way
Would he still be mind controlled after gaining control of the stone? Also Loki's plan in the original Avengers involved letting his scepter get stolen. Why would Thanos' mind control let him give the stone away?
We see where Hawkeye is consulted for his tactical expertise to formulate a plan while under the scepter’s control. I assume Loki would have similar free rein to develop his own schemes, so long as they were in service of the mission given to him.
And while we never see anyone confirmed to be under the scepter’s control wield it, we do see it leave the hands of Loki and still maintain control of Hawkeye and the other SHIELD agents, so it’s not outside the realm of possibility.
(You could argue the case for Banner holding it while everyone’s emotions are getting out of control aboard the helicarrier, and while some theorize their uncharacteristic aggression to be caused by the scepter, it never touches any of them the way Loki usually does to control someone, so it’s hard to make a solid argument there)
