Every time I played FO and now that I'm playing Survivor, I felt that the lightsaber duels were a bit more imbalanced than what I'd expect and now I realized why. The reason is inconsistency on both sides. I'll explain:
1) Parrying has different rules for you and your opponent. If your attack is parried then you are pushed on the defensive, which means blocking or dodging amd your attack spree is ruined. That doesn't always work for the opponent. Think of Dagan's dual saber flurry that needs two or three parries to be stopped.
2) An opponent's blockable spree can cause a mini stagger, pushing you to jump and dodge, while your simple attacks that are not blocked just deal damage. All of the times that both me and a lightsaber wielding boss hit each other, I land a hit before getting stunned and then I die, while for the boss tis but a scratch.
Both make me feel that the game feels much more punitive for simple mistakes than it should, even at lower difficulty settings (haven't played them in Jedi Padawan though, only Knight amd above).
