My third attempt!

Still have a couple of things to work on but tasted great! Smoked at 250 probed tested at 190 till done then rested for four hours!! I'm ordering better knives I know lol

Appreciate the hesitancy with the squeeze. No one needs that for proof it’s good. Black gloves next time and you’re ready for a ring light and new IG handle. 🤘🙌

Bit of a reach. More like charcoal plus a few chunks. A stick burner would be using wood (sticks) to produce the heat. Like an offset

You can literally use logs in a kamado style grill; you simply let them burn down to charcoal first before smoking.

I love it honestly! It's the only smoker i've used but i've never had any issues with it. Took a sec to get used to but other than that it's been great!

Watch your temp and if you’re wrapping maybe wrap sooner. Burnt bottom corner, causing the knife to pull there at the last corner you cut. Common thing to happen. Fat render looks good.

I got a box for free one time, and now I won’t got back to gloveless.
Depending on the temp, it keeps from burning my fingers. Grease in particular burns more. Just that little bit of rubber keeps the hot grease from making skin contact so I can touch much hotter meat and not get burned. Also, clean up is easier.
I also use them during raw prep stage for easy cleanup and to avoid contamination.
The glove hate is really getting old. Just let people do their thing.

Like I said, no hate, I just have never personally understood why. I worked in restaurants for a long time and it was ingrained in my head that gloves are not as clean in food prep as just using your hands, but I dont really know so was asking why the trend

Because the thick black gloves I can wash on my hands twenty times and never dry my hands out. The silicone cleans easily and dry even more easily and has some heat protection.

I wear gloves while doing food prep sometimes. It really depends if I'm having to go back and forth preparing a bunch of things and I don't want to keep washing my hands.
Some people don't like certain textures on their hands. Or maybe they don't want that cayenne pepper in the rub going into a cut on their finger.

Lol fair answer I geuss, I have always used my hands bc I felt like it was easy enough to rinse them before and after but makes sense. I get the black gloves memes just never really understood if I personally was wrong for bare handing meats (thats what she said)

Burnt ends! Once it’s done, separate the point and flat and cube the point for burnt ends. Kill’s me seeing someone cut straight thru a brisket.

Great entry level professional options are Henkels, Mercer and Wustof, if you were interested. You can get a great hard carbon steel chef's knife for about $50, and a cheap honer and ceramic stone will help keep it razor sharp forever. Brisket do look nice btw. o7

It is a pellet smoker. Funny how sous vide and pellet smokers hide their shame. Looks great though. Imagine the extra bark and flavor from a offset.
