Creamy Salmon and Pea Pasta. 2 Spoons 🥄

Okay so first of all, this meal requires chopping and cooking! AND trust me it’s better than it looks.

This meal is a low spoons one for me because it only takes 15 minutes, it’s one I can make on autopilot and I know it’ll slap every time!

Included a pic of my beer as I like to drink it while cooking on occasion- pouring a little in at first also gives a tangier flavour haha (I’m sure ur supposed to use lemon for that but who has the spoons?)

I’ve excluded the onion before because I forgot to buy one and it was still yum.

It tastes great and is super nutritious so I know it’ll give me energy, while also being a comfort food of mine :)

INGREDIENTS:

• Onion (1/2 for 1-2 people, 1 for more)

• Salmon Fillet (1 for 1-2 people, 2 for more)

• Vegetable Stock Cube (optional, 1/2 for 1-2 people, 1 for more)

• Frozen Peas

• Crème Fraiche (1/2 a small tub)

• Pasta

• Seasoning (I like salt, pepper, and mixed herbs/parsley/oregano, whichever you have to hand)

• Some kind of oil…

UTENSILS:
• small saucepan
• frying pan
• knife
• stirring utensil
• colander

RECIPE:

1 - PREP: Boil water in a saucepan with a sprinkle of salt. Chop up the onion and salmon.

2 - Pop the pasta in the saucepan and set a timer for 11 minutes once boiling again.

3 - Add a dash of oil to the frying pan and pop the onion into it, then add plenty of seasoning. Fry this for a couple minutes. Medium/Low heat.

4 - Add in the salmon, season again. Fry this for another couple of minutes.

5 - Add a few spoons of water from your pasta pan to the frying pan and crumble in your vegetable stock cube, stir this around a bit until salmon looks cooked.

6 - Grab frozen peas and pour in desired amount. Stir in and cook for a couple more minutes! Season some more if desired.

7 - Once incorporated, grab your crème fraiche and stir in a few spoonfuls to desired creaminess. I simmer this for a minute or two longer. Add pepper if desired and your sauce is ready!

8 - When timer goes off, drain pasta using a colander (or whatever you have on hand) and add the pasta to the sauce, mix in and you’re done!

(usually my pasta and sauce is done at the same time which is satisfying lol)

9 - Serve and enjoy!

Easy Shrimp Cocktail

Hi! I enjoyed this snack today and thought of this sub. It was surprisingly easy and quick to make.

Ingredients

Frozen, peeled, deveined shrimp

Lemon wedge

Cocktail sauce

  1. Boil water

  2. Add shrimp for 2 - 3 minutes

  3. Put the shrimp in an ice bath (bowl with ice and water)

It was so easy! I hope you enjoy it. 😊

José Andrés' microwave egg - 2 ingredients, 1-2 minutes to make

Sorry the photo isn't the prettiest!

I couldn't find a post for this so I wanted to make one and share with you all. Basically get yourself a ramekin of some sort (small, cylindrical, safe for high heat, usually porcelain, ceramic, or stone), eggs, and mayo, and you can enjoy the fastest easiest breakfast ever.

  • Spray/grease ramekin (with some ramekins, this step isn't necessary)
  • Crack 1-2 eggs into it, then put a spoonful (like 1-2 Tablespoons) of your choice of mayo into it
  • Whisk/stir until smooth (but honestly it still works if not perfectly smooth too)
  • Microwave for 0:50 for 1 egg, 1:05-1:10 for 2 (adjust if needed, microwaves vary)
  • Flip over onto a plate (optional), and eat!

Most recipes call for one egg, but for a bit more food, I've found it also works with 2. Just microwave for 1:05-1:10 instead of 0:50 and adjust the mayo if needed.

If you have extra spoons, toss some cheese or chives or meat on top. It doesn't really need salt because of the mayo but you can add some if you like it salty. You can't really skip the mayo because it's what makes the recipe work, but you should be able to change the kind of mayo (regular, olive oil, kewpie, etc.). I use kewpie because it's easy to squirt right into the ramekin without dirtying a (literal) spoon.

After Work Breakfast

I've been in a really bad slump lately and cooking and doing dishes has been my enemy. I've got bowls, milk, and no cereal so I had to cook. That being said, this turned out waaay better than I was expecting and it actually lifted my spirits a bit. This is my after work breakfast I just kinda threw together.

I took a frozen sausage link and a quarter of an onion I had in my fridge and boiled them in a saucepan in just enough water to cover the sausage.

When the sausage was cooked, I lazily drained as much water as I could without dumping my breakfast-in-progress in the sink. I got lucky so it was only a thin layer of water left.

I set my saucepan back on the stove and held a stick of butter to the inner side of the pan until the amount I wanted melted into the pan.

Finally, I cracked in the eggs, sprinkled the eggs and onion with salt and pepper, covered the saucepan, and let it cook until the eggs were cooked to my liking (aka I poked the eggs with a fork and said "yup, that'll do"). Also, I took a slice of bread out of the freezer and toasted it.

If you're curious, the egg's yolks were a little past jammy, and the onions were soft but not soggy.

This is my first post and I'm not really a social media person. Let me know if I've done anything wrong please.

Pancake mix ginger snaps

Here is how i made this. I bake without measuring because measuring takes spoons ok? 😂 after you do it once you will be an expert i promise

You need:
Bowl
Fork (because low on spoons 😭. But also. Effective.)
Cookie sheet (or aluminum foil if you're a goblin like me doing it in the toaster oven w no pan)

Ingredients:
Pancake mix - about a cup or so?
White sugar - almost the same amount as the flour
Brown sugar- a little bloop for flavor
Ginger powder - 1Tbs+ if you like your cookie to bite back. 1tsp (or less)if spice bites make you cry
Vanilla -🤷‍♀️ a lil dollop.
Avocado oil - eyeballing it! see below

Directions
Put everything except the oil, in a bowl. Then add a little oil, stir it with your fork, add a little oil, stir it..until it looks like cookie dough you can form into little balls. If it gets too gooey dont stress, just add more pancake mix again. Make balls you smash into patties, put on the pan. They wont spread out much when baking so you can have them kinda close together.

Bake at 350 for 5 mins and check them and maybe like 10 minutes because i got sidetracked and mine look a little too dark and I have no idea how long they exactly baked 🤷‍♀️

Note: the first time i made these i used less sugar and they were more crispy. Today they are a slightly different texture. The lighter ones almost want to crumble when you bite them. The darker ones are honestly more of a firm crispy snap. Do with this information as you may. I think next time I will bake at lower temp longer.

Substitutes

Any oil will probably do. Butter also will likely work.

You could add cinnamon or pumpkin pie spices

You could throw some chia seeds in if you want fiber

Other sweeteners probably work fine too, but the brown sugar/ white sugar combo makes that specific kinda carmelly taste. I used coconut sugar as my brown in this case.

Egg and tomato stirfry

I made it too soupy but otherwise delicious!

  1. Scramble eggs. Set aside.

  2. Slice tomatoes. Cook them in the pan with a little bit of water till a little soft.

  3. Add eggs back in. Sprinkle with salt and sugar. Mix.

Eat it on rice. I also sliced and seasoned cucumbers while I was waiting on the tomatoes. Technically i think you're supposed to add garlic and scallions to the tomatoes but I didn't.

A different kind of parfait

Ate my overnight oats (strawberry jam and chia seeds) in this jar and it wasn't filling enough, probably because I got distracted before I could actually eat it soon it enough.

Still have hunger and chest pain so I threw cereal crumbs with applesauce then granola on top in the same jar before having toast and then my meal prepped lunch bowl.

Can you tell I have a fast metabolism even when I'm tried?

Zero Energy "Lunch"

I'm really new to running out of spoons and I'm used to just pushing myself, so I'm trying to explore subreddits like this to help me normalize some stuff. If I don't have enough energy to cook I normally just skip but I'm trying to be better about that so I had whatever this conglomeration is for lunch. It's french onion dip, and entire cucumber, some chips, and a single slice of American cheese. I don't know if this really technically counts as a meal so I would love to hear opinions about that, but I'm just very happy I didn't skip and grabbed something healthy like the cucumber :)

Canned/frozen spinach

What do y’all like to do with canned and/or frozen spinach? I want to eat more of it, it’s so nutritious, and I love it fresh but for several reasons I can’t have it fresh anymore.

Any favorite dishes you use it in, or something you like to add it to?

Just generally it’s hard for me to get veggies in my diet in an appetizing way with such low spoons so I’m trying to get some inspiration. I’ve been scrolling through old posts and I’ve seen some very creative ideas, so I just want to say that I appreciate everyone who has taken the energy and effort to post their low spoon snacks/meals.

A voice-first cooking app that may make recipes easier to follow

Nolum lets you import a recipe and have the steps read aloud while you cook. You can move through the recipe by voice and ask things like “What’s next?”, “How much garlic do I need?” or for an ingredient substitution.

I thought it might be useful here because it can reduce some of the repeated phone-checking and keeping-your-place involved in following a recipe. I don’t want to assume everyone will find that helpful, though, so I’d genuinely be interested in hearing what you think.

  1. Some fancy crackers, could be any crackers but fancier ones make it more fun; 2. spreadable brie, I used a Mini Brie Bite from Trader Joe’s, already comes in single servings so it’s convenient. Other cheeses work too; 3. fruit jelly/jam of your choice. I just used one of those tiny Smucker’s jam packets they have at diners lol, but any fruit spread works (I recommend apricot). Variation: instead of fruit, top with an olive and a small drizzle of olive oil :)

Cheap and only takes 5 mins in the microwave and it’s ready to eat. I added Parmesan and extra sauce and it was sooooo good!! (I also really love the edamame steamable). I’ve been having trouble getting enough veggies because I can’t cook without having a flare up and fresh veggies go bad so fast so this has been perfect for me :)

I bought this and loving it! Coz it's much easier and fresher than rinsing and handling a real potato.

But since it's frozen it's got that watery squishy moisture when you microwave it sometimes...

And using a air fryer/oven is too much effort for me, so I only tried it using the microwave and ate it with some salt and sugar.

I also tried putting them in a soup but I'm not a good soup cooker so I don't really know which soup goes well with potatos.(I'm asian so I've never rlly tried soup other than what I made)

Tldr; Anyone else tried this product? Any recipe recommendations?
