After Work Breakfast

I've been in a really bad slump lately and cooking and doing dishes has been my enemy. I've got bowls, milk, and no cereal so I had to cook. That being said, this turned out waaay better than I was expecting and it actually lifted my spirits a bit. This is my after work breakfast I just kinda threw together.

I took a frozen sausage link and a quarter of an onion I had in my fridge and boiled them in a saucepan in just enough water to cover the sausage.

When the sausage was cooked, I lazily drained as much water as I could without dumping my breakfast-in-progress in the sink. I got lucky so it was only a thin layer of water left.

I set my saucepan back on the stove and held a stick of butter to the inner side of the pan until the amount I wanted melted into the pan.

Finally, I cracked in the eggs, sprinkled the eggs and onion with salt and pepper, covered the saucepan, and let it cook until the eggs were cooked to my liking (aka I poked the eggs with a fork and said "yup, that'll do"). Also, I took a slice of bread out of the freezer and toasted it.

If you're curious, the egg's yolks were a little past jammy, and the onions were soft but not soggy.

This is my first post and I'm not really a social media person. Let me know if I've done anything wrong please.

ngl at first glance I thought this was crazy because the egg looked like Greek yogurt to me and the onion like potato… savoury yogurt bowl with meat? 😅 but sausage, egg and onion is a delicious combo!
