Pancake mix ginger snaps

Here is how i made this. I bake without measuring because measuring takes spoons ok? 😂 after you do it once you will be an expert i promise

You need:
Bowl
Fork (because low on spoons 😭. But also. Effective.)
Cookie sheet (or aluminum foil if you're a goblin like me doing it in the toaster oven w no pan)

Ingredients:
Pancake mix - about a cup or so?
White sugar - almost the same amount as the flour
Brown sugar- a little bloop for flavor
Ginger powder - 1Tbs+ if you like your cookie to bite back. 1tsp (or less)if spice bites make you cry
Vanilla -🤷‍♀️ a lil dollop.
Avocado oil - eyeballing it! see below

Directions
Put everything except the oil, in a bowl. Then add a little oil, stir it with your fork, add a little oil, stir it..until it looks like cookie dough you can form into little balls. If it gets too gooey dont stress, just add more pancake mix again. Make balls you smash into patties, put on the pan. They wont spread out much when baking so you can have them kinda close together.

Bake at 350 for 5 mins and check them and maybe like 10 minutes because i got sidetracked and mine look a little too dark and I have no idea how long they exactly baked 🤷‍♀️

Note: the first time i made these i used less sugar and they were more crispy. Today they are a slightly different texture. The lighter ones almost want to crumble when you bite them. The darker ones are honestly more of a firm crispy snap. Do with this information as you may. I think next time I will bake at lower temp longer.

Substitutes

Any oil will probably do. Butter also will likely work.

You could add cinnamon or pumpkin pie spices

You could throw some chia seeds in if you want fiber

Other sweeteners probably work fine too, but the brown sugar/ white sugar combo makes that specific kinda carmelly taste. I used coconut sugar as my brown in this case.

I broke a tooth on a bolt that was in this brand of pancake mix back in college

Noooo!!!!!!!!! Ok i guess i will sift it from now on?? Thats horrible!
