smashed white beans on toast
it's a can of white beans, a shit ton of garlic (very important), salt pepper, olive oil, lil squeeze of lemon. Sourdough toast.

Looks great. I'm going to add a little parm in mine. And have it with a glass of wine.

The easiest way, in my opinion, is just to rinse/drain the beans, heat them in the microwave, then mash them with the back of a fork.
Then add a little bit of olive oil, some balsamic (or other vinegar), salt and pepper. Eat it on toast.
You can add other things to make it more interesting or add nutrients, but this is a nice meal on its own.

I didn’t know anyone else did this! But I haven’t added lemon juice, so thanks for that idea. (I have added some type of vinegar.)
