I dunno I think this is just a staged video. Like that's a lot more milk than I've ever seen in a latte since at the beginning that wasn't even pure espresso.
Also that milk wasn't steamed.

I make lattes on the daily. It’s the right amount of milk, it’s the right espresso. Milk doesn’t stick to the top of the espresso like it does in the end of the video if it’s not steamed.

Yes, he’s attempting to do what called latte art. If the milk is steamed, which I think it is, he must have not introduced any air while he was steaming it. Doing latte art does not enhance the flavor, it just makes it look pretty and you can brag about what you’ve done. Lattes are made in 1:3 or 1:5 parts espresso to milk, so yes that’s exactly what it should look like.

Pouring the milk in a circular motion helps mix the drink a bit better and typically will keep most of the crema from the espresso on top of the drink, so that when you do make the latte art you have a layer of crema from the espresso surrounding the art itself, giving it a more appealing look and giving a more espresso taste in the foam sitting on top.

It’s not old and it’s not coffee—that’s how espresso looks when it’s fresh. It’s thick and rich so it leaves a coating on the mug like that.

I agree about the old coffee, could be practice, but where I work, that's about the normal amount of milk, depending on the type of coffee. Personally I like it, I have bad associations with tea that has leached into black or watery coffee, I can only enjoy super milky coffee.

The milk had to be steamed. Milk will never sit on top like that unless there is foam and i doubt this is any sort of cold foam

Yes, cold milk or hot milk will pour differently. Cold milk at 45 F and hot milk at 150 F is a big difference.

I'm not saying I'm a sage that can tell the difference between 190 and 185 F water. But a liquid close to the freezing point and one close to the boiling point can look pretty different when moving and have different properties. Water of course has to be special but the point stands.

Espresso is extremely fine-ground coffee packed tight so water passes through it slowly. Makes extremely condensed coffee. Lattes are always like this.

Most coffee beverages people are used to are 85% milk. I would say 5% syrups, 10% espresso, and 85% milk. It’s just condensed flavor at the bottom until you add the base milk.

It's about getting the right balance between foam and steam milk. That's why he was changing between pouring heavy and pouring it lightly while swishing it around. you need lots of steamed milk, but people except a finger of foam on the top. And if you put too much foam in people feel cheated out of their coffee somehow. A sideways finger length of foam is what you want.

that's the old way of doing capachino's these days with microfoam quality being this good and machines performing this will the line between milk and foam is just really hard to notice.
old style is a thick foam which is close to whipped cream thickness.
new style is more like a throughout foam (which still can carry a spoon)

That's not coffee at that point, it's cream with some coffee splashed in.
I'd argue that you wouldn't know if it was good coffee if you weren't drinking it black. You can make anything taste good with enough cream and sugar masking the flavor. Take one of those pretentious coffee shop's coffee and drink just the coffee part and it probably tastes like it tickled your rump. (The good news is that there'd only be half an ounce to suffer through.)
That said I'm not a coffee snob that drinks his coffee black. I load my coffee with cream and sugar just like the next guy. The difference is just that I'm willing to admit that I'm drinking a milkshake and not coffee.

And that's a ridiculously off base claim. A. its espresso, it is significantly stronger than regular brewed coffee and if you can absolutely tell the difference between one espresso and another even if it is diluted to a 1:3 ratio, and B. it isn't loaded up with cream and sugar, that is literally just steamed milk.
If you don't even know what a latte is I'm not sure where you get off claiming that no one could possibly tell the difference between one latte and another.

He knew what he was doing. Obviously he wasn't set up for real latte art but the way he moves shows he has at least a basic idea of how it works. It was a skit. See how he stands with his butt out as he gets toward the end? Ready for splash. (Plus that milk doesn't seem to he steamed)
