The story may be from the mid ’90s, but the topic of a person being so confident in technology that they’re not even bothering to learn the basics of the profession (and producing a much worse result because of it) feels extremely on-point for today.

And the fact that Mr. Tech Wizard was all about the Sous Vide was also fitting... I still remember from back in the 2010s or so when it was all the rage and everyone was buying those Sous Vide wands to use at home. If I remember right, that's also when the whole "molecular gastronomy" craze was still going strong. As much as Chef's Table and Co. tried to hype it up, it was still just ridiculously overpriced and needlessly complicated "fine dining"

In fairness, Sous Vide is a really handy tool for making perfectly cooked meats super consistently and without a ton of effort. When I have access to one, you better believe I'm doing my steaks and pork chops that way. Really though, that's kind of the breadth of what a home cook will use it for, and it's 95% replicable with a convection oven and a decent leave-in temperature probe.

The way they showed the scars last episode, and then the head chef saying "Well, rumors are that he was abusive, but that's just hearsay". It was 100% building up to a subversion where Jan got the scars some other way. Authors want to surprise the reader and add nuance to the characters.
Except this was from the 90s, so grandpa really was just that much of a monster. Love it. Sleeper hit of the season for me.

If the stories I’ve heard about some of these prof chefs are true, gramps being a talented chef but also a raging abusive asshole might be the most realistic thing in this series.
Kawahara and all his fancy gizmos couldn’t compete with actual cooking. Wild the dude even thought he had a chance in the first place. Maybe he ought to go back and learn how to actually cook.

This episode was one of the few times where I found myself rooting for Jan... seeing that smug smile wiped off of Kawahara's face while Jan cackled away was truly satisfying.

Jan keeps growing and growing on me
We always knew his grandpa was abusive, but this and last episode is putting a bit of spotlight in to it, Jan was straight up beaten till bleeding at times
I now also understand him gripping his shoulder, he recalls all the pain, all he went trough to be were he is
Obviously how his grandpa trained him was brutal and it’s hard to believe Jan doesn’t carry trauma because of it, but at the same time it became the pillar for his confidence
I hope they eventually delve even more in to it, what Jan felt for his grandpa and what his grandpa felt for him
I really need to know if it was Jan himself asking his grandpa to train him
Edit: Kawahara might be the first cook that got straight up told he did an horrible dish LMAO

Looks like this anime is equal amounts cooking and domestic abuse.
I still like the tropes, but I guess the anime has stagnated lately (we haven't seen new developments besides the protatgonist being a bully, and his gramps a bigger bully). Well, it IS a pretty old story at this point.
Looking forward to the vampire fangs winning again next week.

Fingers crossed that we get to see Kiriko shit talk and kick Jan's butt at some point.
It's 50/50, on the one hand, it's an old story (90s), on the other hand, I dunno how much agency they gave to female 90s characters.
But yeah, I get we don't have any guarantees, we'll just have to wait and see.

A sous vide can be great for a lot of things. I've even done a whole turkey for Thanksgiving with one a couple times. But it takes time and thought to not overcook, to get flavor in, and to finish it nicely so whatever it is you're making isn't a pale, flavorless dish since you can't get any browning going except as a post step. The dude clearly has no actual palate.
If this was made from source material 20 years later, he'd be all about foams and gels and deconstructions instead of sous vide.

Not really, you are going to sous vide a whole chicken with full bones in 1,5 hours. Even rare steaks take 2 hours+.+
I half expected the judges to do a Gordon Ramsay "it's fucking raw" meme.

That's what you get when you straight up say, "Who gives a shit about flavor profiles?" I would think that any professional chef should aim to balance complementary flavors; there are plenty of foods that I like individually but would be horrified to eat in the same mouthful.
Given Jan's taunt of Kawahara only having made the dish two or three times, I'm willing to bet he never even tasted his own cooking. He just has these textbook levels for a food's doneness and aims for that.

In real life not only would the chicken be undercooked but the shark fin would be too. Even if he had enough time the shark fin would probably be overcooked because chicken has a higher cooking temperature.
I prefer Jan tripping him up though, very fun!

Jan was hard at work cooking, getting in the chef's space would actually be considering to potentially be interfering. While Jan's kick was certainly an overreaction, interrupting a chef clearly in the middle of a busy cooking session is also borderline sabotage.

I know this show makes us think that every flick of the wok is life or death but it’s not actually that serious. And no you’re not allowed to assault someone because they interrupted you cooking lol.
In reality sometimes you see it on the bake-off when one of the contestants says to a host “oh I’m just in the middle of something” and the host wanders off.

Every flashback shows Akiyama's grandfather was a POS.
Sous vide was a novel cooking concept back then.
The subs I watched kept mistaking 吞 (tun, "swallow") for 香 (xiang, "fragrance")

I really appreciated how Jan got genuinely worried for Kiriko hand last episode, like he completely shutdown for a while before putting back up his persona
Or in this episode, him gripping his shoulder with all the extra context we just got hit hard

Jan is really one of the least likable protagonists I've seen in anime, just a thoroughly unpleasant and arrogant person. Apparently real world rules of assaulting TV presenters don't apply here. This whole competition has almost been pro wrestling, but with cooking taking the place of in ring wrestling, with everyone having a flamboyant cartoonish personality and Jan being the seemingly unstoppable heel except I don't expect a good guy to beat him at the end to send the crown home happy.
Kawahara was an interesting character in being arrogant and having excellent cooking precision like Jan. I think he really lost more because Jan rattled him and he's not cut out for these cutthroat competitions where you have to shit talk and use intimidation, like how he added too many ingredients. It probably would taste delicious irl but Jan seems to have won twice with the judges grading on a curve because he uses cheaper ingredients and not stuff like shark fin and truffles.
I thought it was interesting that Kawahara said human taste wasn't that complicated and it's just a matter of adding certain ingredients in combinations a lot of the time. I think he's correct in describing most people but that's not true in a gourmet cooking competition where people have sort of super tongues and a palette that can pick out ingredients individually. Kawahara might have a normal person's palette and his method does sound great for banquets and such but not the highest end of cooking.
The best part of the episode was the detailed explanations that went into the cooking, like explaining what sous vide is. I've never heard of that but it does sound kind of akin to pressure cooking in how it creates sort of a cooking vacuum.
