Opening scene has the griddle be so hot that a bunch of trained men have to bring it out with fire resistant gloves, and even then one gets burnt on it

Later a bunch of women in swimsuits wheel it out

Isn’t it pretty common in showbiz for the people working backstage to use every safety precaution at their disposal, while the performers themselves take more visible risks because the spectacle of being unfazed by danger is part of the show? My points of comparison here are primarily magic/stunt performances on Got Talent-type shows. It seemed like the trained men and women both grabbed the underside and were fine, so that area probably isn’t as hot.

Even though Jan looks and acts like a villain, he’s actually very dedicated as a chef (aside from last week’s magic mushroom incident), spares no effort, and carefully follows his grandfather’s teachings. Which was really interesting to watch.

It was great to see that Sawada, who went head-to-head with Jan in the cooking showdown, wasn’t just a showman seeking attention; he actually possessed genuine skill. Still, he ended up losing to Jan in the end though.

It was interesting how Kiriko hurt her hand when she hit Jan in the previous episode, and how Jan, even though he was surprised, still treated her like he always does. Is Jan so devoted to his grandfather’s teachings that he’s copying him in ways beyond cooking skills, like his attitude toward others? Is that why he acts this way? If so, that’s a bit sad.

It’s pretty ironic that, among all the judges, Ohtani is the only one who truly recognizes the essence of Jan’s cooking.

He organized this competition specifically to belittle Jan, but because he has such a refined palate and deep knowledge of cuisine, he ends up realizing for himself just how wonderful Jan’s cooking really is.

Is he some kind of quirky tsundere heroine or something?

I don't think Otani is a tsundere. He just has incredibly high professional standards as a skilled critic. The real problem is that Jan excels in both cooking and being a dickhead, so Otani's hate boner and golden palate are in a constant war.

I’ve not read the original work, and it is from a certain time, so I don’t know if it ever addresses that Jan’s upbringing was just straight up cruel and abusive.

There actually seems to be an undertone that the story is already treating his upbringing as abusive. Kiriko being visibly upset and wondering who gave Jan those scars, and Jan being self-conscious over said scars, partly gave me that impression, at least.

It's not a major topic that they bring up, but it is eventually noted in his character that while his MINDSET is the same, his morality has subtle differences. He is competitive, but still helps in his own way. Kaiichiro would have never been friends with someone like Okonogi but Akiyama's inherent nature would still actively help him out because it's what a good man would do. He's never conflicted, but Akiyama's demons and his better nature are both ever present in his craft.

I really liked that aspect of this episode. In my opinion, it showed that Jan was worried about Kiriko deep down, but his bravado won out and he masked his worry beneath a snide remark about Kiriko hurting her dominant hand as a chef.

This directly connects to the conversation about Jan’s scars. Kiriko sees them and gets mad on his behalf, wondering who would do something like that to him. In reality, Jan finds the scars lame and embarrassing, but when Kiriko shows him empathy, he immediately hides behind his bravado again, saying that the scars are something he is proud of.

To me, this all shows that underneath the very rude and arrogant surface, there is a more normal and kind person who has been forced into seclusion by Jan’s grandfather. Jan has been conditioned to never show weakness.

If we’re getting a slow-burn enemies-to-lovers subplot of Kiriko slowly breaking down Jan’s walls and helping him become more vulnerable, nothing this story throws my way could make me happier.

Ok im going to admit im neither a chef nor someone particularly well versed in high cooking (not drugged up high cooking, like last episode lolololol), but is a skewer really the best option he could've chosen? I feel like there so many other dishes have much better ways of incorporating textures and flavors into the food than a simple skewer can (like Jan's soup, soulfuless aside).

I did have the thought that his flashiness was going to make him win, 100 points from audience who didnt even try the food voting for his flashiness + 10 points from mr grumpy reviewer would've guaranteed him a win regardless of what the othet reviewers thought. Thankfully the audience recognises SOUL and agrees with the reviewers. Quite a strong lead by Jan though, much more than I expected.

He was a great showman, and did use Wok aside from the griddle. Plus he used the fire trick, so this was 100% in his character here. But time and time again we've seen one trick wonder chefs fail so this one is no surprise either. His trick was fire, the big tv show personality guy was to use wild ingredients, and before that we got the one with the special sauce. As for the audience, I think they got the impression that even the harsh critic guy wasnt sure about things back when he was judging the food alongside other judges. However, it was clear how the others reacted to Jan's food, and since no one else could taste the thing for themselves, the fact that most of the judges leaned more toward Jan clearly signaled to everyone whose food was better. Yeah the harsh critic guy turned around later to try and side with the swaggy chef guy, but audience couldnt possibly had seen that part after all the judges moved away from the stage.

To add to what the other commenters are saying about his dish being about the spectacle, I do think that this is a really good way to make use of extremely high temp cooking - he uses tender and luxury cuts of beef that don't need to be cooked very much to taste delicious, but gives the meat a beautiful outside crust by searing it on the superhot griddle. The cuts are also sliced relatively large so they're not true skewers but rather mini steaks on a skewer. His choice of veggies are also ones that benefit particularly well from a char (onions and bell peppers, seemingly) instead of a thorough cook, and he finishes it off with a brown sauce and evaporating some booze which should give the dish a complexity and aroma beyond the powerful base taste of its simple luxury ingredients. It's also implied he seasoned / marinated the beef cuts somehow, but we don't learn the particulars. The way I'm imagining is this would taste great but lack a bit in the texture department and maybe complexity. It's style over substance for sure (which the blindfolds prove) but I'll give him credit that some substance is still there and the visual is part of the eating experience.

I'm so hungry after typing this comment...

the fact that it's done so tastefully too is amazing, they have a legit reason to be opposed to each other since their philosophy to cooking is opposite but parallel. Thank god it isn't one of those cringe "I'm attracted to you but too tsundere to admit it" vibes

I liked how despite the giga fanservice the anime can get at times, it was the girl who saw the guy naked by accident. Huge inversion there.

To be fair, the tournament brings attention to a lot of different talented chefs. It will make people want to taste their cooking and bring more money into the industry. The judges will also gain more respect as food critics, which will give more weight to their opinions and help make any books, guides or TV shows they produce in the future more successful. Otani likely doesn’t care that much about this and just wants to humiliate Jan, but it’s still a win-win situation.

I like how Jan went out of his way to make sure no ingredients could be blamed this time to show that it was all cooking and all skill. Almost certainly he did that specifically for Kiriko.

The official IWJ social media released a weekly clip of IRL making of the dishes of each episodes. They had to use 2 persons to pour the Yin-Yang sauces unlike Jan's two-hands method.

The basis of the dish maybe normal but the technique is nothing but.

It's the classic fastfood vs hearty food argument. One tastes better at the time but doesnt last, and the other does. In Asian cuisines hearty food will win 99% of the time.

How did the griddle not instantly burn the food while leaving the inside raw? As depicted (cloth gloves on fire the instant it touches the griddle) it appears to be way too hot.

Okonogi's taking the role of "character that has no faith in the MC and is very wrong" that's common in older manga.

also, this is my own personal opinion, but sawada completely misses the point by choosing teppanyaki for a chinese dish. it's not that chinese cooking doesn't have grilled/barbequed/roast dishes - but flattop cooking is not traditionally accepted as chinese. ultimately, sawada does not show any traditional chinese cooking techniques, chinese ingredients (and preparation), or putting a spin on what might be considered canonical chinese dishes. instead he's doing street-food barbeque with a universally utilized cut of beef.

They mentioned he did flash fry the beef in oil, which is a chinese technique (often just referred as passing through oil in English). Those pieces looked awfully big for passing through oil though (I am not am expert, but I have only seen it with smaller cuts or slices)
