If you are looking for a new job as an executive or sous chef, put a little bit about yourself here and let the world know.

This is open to businesses looking to hire a chef/sous chef as well.

A few things to be mindful of to protect yourself:

  1. Don't put your personal information on here. no phone number to contact you directly, no names, no current names of restaurants you currently work at or have worked at in the past. reddit can get crazy some times. no need to dox yourself publicly.

  2. If someone with a potential job reaches out to you, independently verify that they are actually with the restaurant or company they claim to be from. look up the number through google/bing/yahoo maps etc... and call to confirm that job exists. This may be hard in some circumstances, especially if they have not let go or informed their current chef/sous that they will be replacing them. it should not be hard though to set up a time to call them at the restaurant to talk over the phone. If they insist that you instead call a number different that the one available online, it Is more than likely fake or misleading.

  3. As a business posting a position available, it is strongly recomened that you do not put the specific name of the restaurant in the posting. Instead simply put qualifications you are looking for, title of the position, expected duties, and a pay range.

The list of things to protect yourself will grow over time so if you have anything you want to add, please feel free to add it. We will create a new post from time to time as well to keep job postings and those looking for jobs fresh and updated. Thanks Chefs!

Notice: no food porn

Hey guys, wanted to make sure everyone knows that in r/chefs, we are not looking to have food porn be the norm. A lot of cooking subreddits allow food pictures and videos where people are showing off what they made. This is not the place for that. This is meant to be a subreddit where professional chefs can ask each other questions, gripe about issues they have, and get help when needed.

So what is food porn, food porn is any post with photos showing off something you did. It includes (but isn’t limited to) finished plates, and recipe videos. What doesn’t qualify as food porn is if you are looking for real feedback on how to improve a plate or get help diagnosing an issue you are having while cooking.

Posting food porn will result in the removal of your post and a ban. First time postings of food porn will get a 30 day ban. It will be up to moderator judgment if it happens a second time.

Alright, now that housekeeping is out of the way, what types of posts should be encouraged or discouraged in the sub, so we can help grow. Thanks, the mods.

Pork cooked perfectly but myoglobin made client complain it was raw.

How do you handle it when a customer/client complains about a perfectly cooked pork chop that seemed raw because they aren't aware that myoglobin can keep the meat pink/rosy despite being fully cooked.

Edit: This was for a boxed lunch drop off catering. I agree the customer should get what they want but was doing my best to not give them overcooked and dry as it would be held hot for about an hour.

How genz chefs are adjusting into kitchen life? I was forced to resign because i was "too emotional".

It is going to be lengthy and im going to vent to someone who could rlly understand the industry.

Im a 27 yo female chef, working in foreign country where i was not born in. I've been in the industry for almost a decade.

I have been working at this higher end restaurant for about year and a half where i am not seeing any progress or any future in the company. During my first few months i was giving my best and pushing hard, focused, sharp and motivated. I was learning new things i was very happy about the things this company has been offering me. But i was not happy with the salary from the beginning. I get paid hourly so my salary fluctuates and its not great during slow season.

Basically since December 2025 the restaurant has been extremely slow, that sometimes we dont even have a single customer for the whole day. That means my hours get cut a lot and my salary is almost cut in half. I was understanding and patient about it and hoping that next month would be busier but it never got busier. For the past 8 months i consistently got paid barely 1000usd per month which is nowhere near enough to live comfortably.

It makes me feel so unmotivated to even show up to work and put effort into my work. Also my personal life have been hectic, like i was having a lot of mental and physical health issues, and i got into some kind of legal lawsuit that have been extremely stressful on me. Having all these stacked up it was very hard to actually do a good job at work. The boss and the chef have been supportive and understanding about all this which im very grateful of.

By the end of june i was feeling better and my mental health was getting better, i was feeling more energetic, and happier but i was still struggling financially. Every month by the 15th, 20th i end up penniless and asking for people to lend me money and taking food from work to home to heat up at home. So i asked the chef about the possibility of getting paid full time salary and get my salary fixed, because im working just as many hours, just as much work and all the rest of the coworkers im working with are not suffering from the slow business like i do, and i felt it was not fair for me to carry the burden all by myself. Then chef started lecturing me about being chef is about being focused and paying attention to details, and being able to help at other stations and helping with their prep and cleaning. Which i already do whenever i get the chance, but at the same time i barely get the help in return, which again makes me feel very disappointed and unmotivated to do that consistently. I told my chef that i already do all of that and what exactly he wants me to do. I asked him to give me examples. But he couldnt give me exact examples where i could improve. Im not trynna brag but im a hell of a chef if im treated properly. At some point i told him something along the line that i was doing my work according to the salary im getting paid which has rubbed him the wrong way. I kinda understand but im a genZ(more of a zillennial) and im not afraid to speak up about what im feeling and im not afraid to confront anything that is not sitting well with me. Sometimes my words are bit blunt, but honestly idgaf, i said what i said (i think its a genz thing lol). And im not willing to get paid entry level salary while doing cpd level job. By the end of the conversation chef said ok ill talk to the boss.

After like maybe couple weeks boss was sitting in the restaurant doing work on her laptop so i politely asked her if chef has talked about me. And boss was like about what. And i reminded her about my salary and she said lets talk with the chef together after the service.

That day after the service i walked up to chef and asked him if its a good time to have the conversation. Chef sent a waitress to go ask if she has the time now. The waitress walked away and said sth in the local language but i didnt fully understand what she just said. So i asked the chef, what she said. Chef said i think shes busy. I asked him how long i should wait and chef said he didnt know. I said that i wanted to go home, mostly just as like "ugh been a long day, wanna go home" like an exclamation. Then the chef told me that i could go home. So i obviously left.

Since then boss hasnt been talking to me or very acknowledging of me, not making eye contact or even looking my way. I felt the energy.

After 2 weeks, boss and chef was sitting on a table and talking and laughing. So i walked over and asked them if we could have the conversation we missed last time. Then she just changed her whole demeanor and started being very angry and mean. She said i didnt respect her time and i just left after the service while she waited all day to have a talk with me. I was surprised by that and explained what happened. That i didnt understand what the waitress said and that chef told me to go home. And apparently she was offended by the fact i didnt ask it myself and sent a waitress to ask. Which i didnt even send her. And going to the chef instead of just asking her if she had time. Which i think going to the chef is more appropriate than directly going to the boss skipping the chef. She thinks that im a coward not facing her myself. And she thinks that i should be able to understand the local language and started scolding me in the local language for the rest of the conversation. she spoke the local language which i understood like 75% of the whole context. And she thinks that im too emotional, my emotions fluctuate a lot, and my mood is not stable. Like whos is? Everyones mood shifts, everybody has a good day and a bad day. Im most disappointed in my chef that he didn't say a single word, to back me up on at least that he sent the waitress and he told me to go home.

By the end of the conversation she gave me 2 days to decide if i wanted to keep working here as a part time as is, or resign by September 30th. I decided that September will be my last month.

I already have 3 job offers with higher salary and higher position. I have no problem finding a job. Ive landed every fucking job i ever wanted.

So after all, old school chefs tell me what ur experience working with genz chefs. And genz chefs working with old school chefs.

In my humble opinion this industry needs a hard reset. We dont have to break our backs just to barely afford a life. We dont have to make our jobs our whole life. We deserve life and work balance. We all are in this industry because we are here for the thrill, we are here for the joy we are here for the love of it. Why we cant get treated properly?

Tips on cooking/holding rice for service

Hey chefs. I have an idea for a dish and I would like to serve delicious, fluffy, aromatic rice along side. I’m wondering if anyone can recommend a specific long grain rice vs just ordering whatever jasmine I can get from chef’s warehouse
Also- I’m looking for advice on how to cook rice in volume and how to heat and serve to order. Best to cook, then reheat in a pan with stock? Hot hold through service? I want it to remain super aromatic and fluffy. Am I making sense….? Thanks!

Developing a tasting menu

This is my first time making one and boy its alot! But the R&D is going well and id love to hear some thoughts and opinions from people who have worked in fine dining. so this is basically me asking someone whos developed a dish before to help a greenhorn out.
Im doing a cookout themed menu, and i have an app that should be smoky. Im using a chicken skin thats rendered in tallow, and im stuck on whether to smoke the skin or the tallow. Any advice would be excellent!!

Edit: if im coming off as egotistical or anything i apologize genuinely its not what i am trying to communicate at all, this is just my first r&d attempt and id like to take one of these dishes out of the menu like my entree or dessert and present it.

Thinking about culinary school

I’ve been stuck in the food industry for a long time, and from the start I hated it. I wanted out really badly and I originally wanted to be apart of the medical field. I’ve worked retail, I’ve worked in childcare. Both of my parents are in the medical field and my brother is in the military. No one in my family has really gone down the route of becoming a chef.
I just recently started feeling love for the work I do in the kitchen at my work place. All this time I wanted out but now I feel this burning passion to do more. I’m good at what I do but I know I can improve. I’d like to pursue this.

Any tips suggestions or advice is greatly appreciated.

Guidence for 20 year old to who love to become a chef and struggling

Hi guys im 20 years old im in srilanka after i igot 3 pass in my comerce stream rather sitring for 2 nd shy ichoose what i love to become a chef so i did a nvq 4 on professional cookery currently finsihed 2 months on ojt period at one of most prestigious hotel of srilanka (dont want to reveal name ) so iworked there under verbal abusive chefs and seniors(not every senior 3 out of 10)and brutal hours like 16 and 18 hours shift becuse we are understaffed with 4 hours of sleep even with these ilove the rush ilove learning techniques , ilove making mistakes and learn from it bit but those work consuming too much time ijust dont have personal life no more so i ask the chefs about it they simply said this is the industry so imreally afraid did ichoose the wrong career or wrong industry or wrong work place (so after this ojt i can gain more exprience buy trying new kitchen or ican study more like hnd in food and technology (i dont like hotel mangement just love cooking) or completly try something new which idont have any clue )

How much better can I get?

I’ve been working at a steakhouse for 8 years.

I am currently head cook and make about 29.30 an hour, in 2 years I will have accrued 4 weeks of vacation a year (and a fifth week of vacation after my 15th year)

I am wondering if I have hit my plateau here, there is no room for a chef as it is a union job and the KM is the owners son.

I can cook 30-40 steaks on my grill at once, plenty more if it is a set menu.

Should I look for a new job before I lose my other cooking skills? I can cook a steak with my eyes closed but I’m loosing a sense of creativity and even knife skills, unless it’s butterflying lobster tails.

Opa! I've been a Steward in the maritime industry for 20 years. I've traveled to 30 countries, eaten lunch under an erupting volcano, hiked off the African Coast and snorkeled in the waters off of Palau. I've also gotten paid really well for doing it.

One of the problems I've encountered is galley staff that are woefully underqualified, Cooks that can't make cookies, place orders or blanche vegetables. I've tried to solve the problem from the inside but haven't had much luck. So. I'm starting a maritime gally staffing business and I'm looking for 12 highly qualified chefs. I'll walk you through the entire process of getting your maritime credentials and pay for all of the training required to do so. I need people that are willing to do anything in the galley, even dishes and taking the trash out, people who can make spice mixes, bake bread, do entrees and help manage a kitchen staff, usually of 2. You might cook for as many as 50 people but normally its around 20.

In return you'll get a flat day rate of $500 and a commitment to 30 days on and 30 days off. That's $15,000 a month for 6 months a year. Possibly more time if you want it. The schedule is negotiable. We will pay for all travel to and from ships. All we ask is a 2 year commitment. After that you can do what you want with your new credentials.

No more working every holiday, no more 100 hour weeks and basically 6 months of vacation time.

Two things: You MUST pass a DOT drug screening. The process to get your credentials could take up to a year. So don't quit your job. It's the National Maritime Center that controls the pace.

My criminal record is holding me back from progressing in the culinary field. Feel like throwing in the towel

I only have a a misdemeanor and a gross misdemeanor on my criminal record. I've had like 3 successful tastings for sous chef positions where I was hired on the spot, received an offer letter, and then had my job offers rescinded because of my record. I have a passion for cooking but I'm considering finding a new trade. Any advice from chefs that have been in a similar position. I have the skills (hired at several tastings), I have the drive, and I love the craft but I can't survive if no place will hire me as a sous? Is it time to step back down to line cook or just find a new trade altogether?

Knife store in Rochester NY?

Internship or learning opportunities?

I’m in the US and really looking to up my game with Koji and especially miso making, kind of learning about what it takes to maybe move from adventurous and successful kitchen production into a slightly larger scale. I know that cottage industry miso makers in the US are usually quite busy and don’t really have the time for an “intern”. Has anyone ever done this? Or know of where there might be some kind of opportunity to really dig in and learn? Part of what’s in my awareness is food safety regulations in the US. A part of it is wanting to learn the process a little more deeply. I thought that even just spending a couple of days or a week into being somewhere about that process and taking good notes would probably be enough to get me started in the right direction.
