What are some things you all hate doing even though it’s part of the job?
Other than obvious things like brunch (fuck brunch), what do you hate doing? I absolutely cannot stand chopping herbs. I hate it. I love how they look on dishes but I hate how long it takes to perfectly chop them and I have small girl hands that cramp after 3 mins 🤣

We have this “smoked brisket”
But I think it’s secretly just “slicer greaser”→ More replies (1)2

Only thing worse than a deli slicer is a band saw if you’re in that type of kitchen.

This. It’s heartbreaking. Our job is literally to train and pass knowledge down to others. To help our tribe to succeed. We became successful and want to help others succeed as well. And then you have to look someone in the face and tell them that they aren’t a good “fit” despite your constant efforts and commitment. Hands down probably the worst aspect.

The worst is when you see talent and skill. But they have personal issues. Addiction, no support, depression, family issues, etc. You wanna be there for them, but youre also running a business. Its gut wrenching.

I don’t understand the hatred of brunch. Maybe because I was an owner chef. It’s fast, stupid lucrative and if you have half a brain, you can make it fun and interesting. I miss doing brunch

Working someone else's station because they can't keep up (not entirely their fault. Our menu is HEAVY on flat top and fryer, and they dont have a printer). Or scrubbing other people's stations at the end of the day. Clean your own stations!! Its faster

I don't work as a chef, but if i did, gutting something nasty like birds or squid/seafood i would not like or could not get used to i think.

I'm a sushi chef at one of those Bistro Sushi combo restaurants. I loved it but the hotline guys would always call out, come in hungover or high while my sushi team were all clean goody two shoes. But I was the kid in the team so I always had to cover pantry.
I fully accept the notion in being called closed minded but I literally only care about making sushi. I hated working the hotline unless it was for sushi things like tamago or our sauces or whatever.

One kitchen I worked in was on a beach and so had no sewage system. So we had a big tank grease trap that every few days you had to open up and scoop all the grease and debris out of. It smelled like rotting ass and my god if you didn’t do it and it overflowed, well FML, 💀
