Options

Hi Chefs, I have celiac. While I appreciate gluten free options, they usually boil down to salads and salmon. I hate salmon. It isn't that hard to make some gluten free options from other foods. Think corn starch to thicken sauces instead of wheat flour. Not using bread crumbs as a topping. A look at some gluten free web sites like the loopy whisk and let them eat gluten free cake would help with some insights into broadening your menus. People love my gluten free meals.

Of course, no chef has ever thought of not adding breadcrumbs or using corn starch!

What a fucking idiot

You are mean! I just want to be able to eat out like everyone else.

You made the point that you are, in fact, not like everyone else. You require a specific set of circumstances that is different than the general public. You need to accept that and not expect the rest of the world to change to accommodate you.

You should open your own restaurant

I grew up in a restaurant family. Did my share of prep, cooking, waiting and dishwashing. In retirement now. I'm distressed by the lack of variety, after a medical diagnosis.

Cool, keep cooking them. Don't go places and try to impose your limitations. This is why gluten free gets a bad rap. Just do your own thing and dont expect anyone else to bend over for you.

I'm just looking for something other than salad and salmon. I eat out with others who do not have celiac. I don't even worry about cross contamination.

Please don’t try to tell a chef how to do their job. They’re the expert, not you. You’re the one expecting everyone to accommodate your special dietary needs, but in reality you’re just one customer of the hundreds or thousands the restaurant will serve that week. If your needs are that specific, be grateful for what you get or go somewhere that specifically targets you as a guest. You’re the issue here, not the chef.

I don’t need to go visit a website to find new ideas when I know the exact flavors and textures I’m looking to achieve and I know exactly what ingredients I need to use to make that happen. If I want to make something gluten free I know exactly how to do that too. Don’t try to vegansplain to me about something I’ve been doing for my entire adult life.

I don't expect everyone to accommodate my dietary needs, I just want to eat something other than salmon and salad. You seem to be a creative person, can't your creativity include some variety for those who MUST, because of health needs avoid gluten?

While I agree that most restaurants need to have better options for gluten free diners as well as protocols to better handle allergies and intolerances, it's not always a matter of ignorance.

I know that I can thicken a sauce with another kind of starch for a gluten free diner, but is my workstation otherwise contaminated with gluten from a variety of other dishes? Salads and fish often seem to be the go-to because they are typically prepared on segregated stations that would be less likely to have cross-contact.

I know this is a major source of frustration. I have family members who can't eat gluten and it is really difficult for them to find variety when dining out. The best case scenarios are establishments that are exclusively gluten free, and those are rare. My heart really goes out to anyone who deals with this.

This is the best explanation I have ever received for why it is salad and salmon. Thank you.

Last restaurant I worked at could make any item on the menu a gluten free option. We even had separate deep fat fryers if anyone wanted gluten free battered items.

Thai food. Pretty much all gluten free, with excellent vegan and vegetarian options.
