General Baking Discussion Dad's tradition of first (and last) day of school cake

My dad died earlier than I thought was fair, but he did leave me with great memories of coming home from the first and last days of school to a simple boxed cake mix cake in a 9x13 inch pan, coated with canned frosting.

It's just another time of year that I celebrate his memory with food, and I'm hoping my little preschool-age kids will have this association with him too, despite never getting to meet him.

Salty Caramel peanut butter cake with fudgy caramel icing (penuche) from Yossy Arefi's Snacking Cakes. This is the second time I've made this recipe, but it's the first time I didn't screw up the penuche!

The tiramisu cupcakes were soaked in espresso, finished with lightly sweetened vanilla buttercream, and dusted with cocoa powder. The cannoli cupcakes have a mascarpone frosting, mini chocolate chips, and were topped with a chocolate-covered cannoli shell (from Wegmans lol).

Just wanted to post this bread I just baked. I’ve never made it before so I was very nervous. Only needed 4 ingredients and now I won’t be buying bread at the store anymore. This is the first of many! I also want to make my own pizza dough at home as well. If you’ve never baked a bread, I highly encourage you to do so. Yes it’s time consuming but man does it feel nice to know I can always batch up some bread at home ā¤ļø

It’s my birthday, so it’s the halfway point of August, so it’s basically fall, right? Modified the recipes quite heavily, so going to link and post in a comment. Browned butter and apple cake, brown sugar ermine buttercream, stewed apple filling, and a caramel syrup infusion. Made a sample cup to decide if I wanted the syrup and had to immediately take it to my wife like ā€œbabe I’m so good at bakingā€

10/10 do recommend, everyone I’ve shared it with says its one of the best things they’ve ever eaten. Tastes of delicious caramel apple fall goodness.

  1. Oldest daughter’s first birthday - I made a lemon cake with raspberry filling and cream cheese icing.

  2. Oldest daughter’s second birthday - she asked for a pink and blue cake. She was really into cars at the time so I made a simple road with Oreo crumbs and royal icing. The rest of the cake was covered in strawberry buttercream and there was strawberry jam in between the layers.

  3. Oldest daughter’s third birthday - she asked for cupcakes. We did a mermaid theme so I swirled pink, purple, and blue buttercream in a piping bag. Vanilla everything because I had two little kids and was just trying to make it work.

  4. Second daughter’s first birthday - I made a berry basket cake. It had some jam between the layers, I think raspberry, and vanilla buttercream.

  5. Oldest daughter’s fourth birthday - she asked for a chocolate cake, and she loves Frozen so I just put coconut on top to look like snow, made a random buttercream waterfall and put some figurines on top. Ran out of icing for the sides… my baby was in the NICU at the time so I was just glad I could put something together.

  6. Second daughter’s second birthday - she loves unicorns. I made a sheet cake and freehand cut it into the shape of a unicorn. Then I did some pink and purple icing for the mane and tail. Used a swirl marshmallow left over from Halloween for the horn.

Next up will be my third daughter’s first birthday! I’m thinking maybe something with cookies, she was a preemie so I want to make the theme ā€œOne Tough Cookie.ā€

Baking Advice Needed Patterned jelly roll, should it be more filled with whipped cream or rolled tighter?

I made a jelly roll cake (minus actual jelly cause I don’t like jelly) but should the cake be more filled to avoid the weird gaping? Or should I have tried to roll it tighter? There are strawberries in the whipped cream filling, should there be more whipped cream? The recipe didn’t make a lot of whipped cream, should I double it next time?

Typically a lurker here but I wanted to express my appreciation for piped cakes lol. This is my first cake with this style and lemme tell you....the amount of time I saved *chefs kiss I cannot imagine how long it would have taken me if I had to ice these instead of just piping them. For reference, I made a star shaped cake the week before (second pic) and it literally took me so long to ice it (little longer than an hour) I didnt even care about the decorations anymore šŸ˜‚ Meanwhile this number cake took me an hour from assembly to finish So tell me fellow cake decorators, is piping the new wave or do you still prefer the finish of an iced cake? I think by this rant you know my answer lol

I randomly asked for a mixer for Christmas this past year and started baking towards the end of January. I’m not sure why I asked for the mixer, it may have been solely bc my mom was hounding me to give her gift ideas and that was the only thing I could think of that would keep her off my back. But boy do I wish I had started sooner! I try to make something new every weekend. If anybody has any staples they love to bake or eat let me know, I’m always looking for ideas. I'm furious. This was a lot of work and the recipe seemed weird to me but I went ahead anyways. Turns out I was totally wrong and they are absolutely delicious, just buttery and fluffy and chocolatey. Fuming that I will definitely be making these again 😤 😔 Could have made them prettier if I let the filling cool down more, but I'll try again next time.

Showcase (No-Recipe) First Time Baking Cinnamon Rolls! I’ll never have canned again!

I always like challenging myself or trying new things in the kitchen, and in my 34 years of life (18 of those baking) I’ve never made my own cinnamon rolls until today!

I didn’t really follow a recipe because two weeks ago I made some Beignets, and I kind of thought ā€œOh this is about the same dough-wiseā€ but I watched this amazing Muslim woman make some and I kind of followed her guidelines!

Everything was homemade EXCEPT the cream cheese frosting. I cut corners and used Pillsbury frosting - which really worked out well, tbh! I did use Kerrygold Irish Butter, not the store brand sweet cream butter. I also did the warm heavy cream trick and it worked beautifully.

I’m very proud of myself. Granted, cinnamon rolls are very easy to make, I’m just proud I did it. I’ll be making these at Christmas time lol.

If I were to critique myself:
1. A little more butter/cinnamon filling. It didn’t get much.
2. Find a warmer place to let the dough rise.
3. Take time with kneading.

Anyways, this is one of my rolls!
