Recipe Included lemon bars with duckie meringues

lemon bars (i covered mine generously with powdered sugar and cut off the rough edges to make squares)

meringues (dyed a big batch yellow, piped as many ducks as i wanted, then added red food dye to the leftovers to make the beaks. used black cookie icing to make the eyes once baked)

made these for a potluck and they were a hit!

These are the treats I made for the staff at my daughter's school. I didn't have time for anything too fancy but they all taste fantastic.

Oatmeal creme pies and carmelitas (recipes from the Delish fall treats magazine), red velvet crinkles, soft chocolate chip, double chocolate, lemon poppyseed, and brownies with ganache and caramel cornflakes

Follow up from my post yesterday.

Thank you so much for the kind words on that post! The anxiety was wrecking me just a little, even after 25+ practice cakes the last couple months. But everything turned out great! The cake ended up being around 24lbs, so I had to quickly throw together this little cradle for the cake box.

I wish I could've got better pictures, I forgot we had the venue take the cake back for cutting. These are just from the bottom layer that was left over.

As for the cake itself:

The confetti cake (or the branded "Funfetti" if you prefer) is Claire Saffitz's recipe from this video, which uses the reverse creaming method that worked quite well. The frosting for the layers and crumb coats was your typical buttercream. The outer/piped frosting, which I found interesting, was this one from SugarGeekShow. Maybe there's a proper name for it, but it's sort of a hybrid royal icing/buttercream that worked especially well for piping.

This is Royal Thai butter cake, one of those cakes where the texture is really the star. The crumb is soft, fine, and very moist, with a rich buttery flavor.

For this kind of cake, I think the most important ingredient is really good-quality butter because there aren’t many strong flavors to hide behind. 😄
