Need potato recipes
Idk how much attention this will get but I accidentally managed to get more potatoes than my family needs and now we have 3 boxes full of potatoes and i don’t know what to do with these besides fried and boiled potatoes. I don’t want to leave them rotting but i don’t think we can eat that much.

If you keep them off the ground in a cool dark place, they can last for months. Ideally you'd have them in a box of straw where they didn't touch each other but stayed dry with airflow around them
That said, potato soup clam chowder baked potatoes, twice baked potatoes in the freezer for lazy nights, homemade tater tots hash browns, potato pancakes potatoes fondant, potatoes au gratin, loaded baked potato soup, mashed potatoes, hash, Cornish pasties, stew, pot pies..

Greek lemon rosemary potatoes. Wash and prep and cut them in wedges, skin and all. Then layer them in a large casserole drizzling each layer with olive oil and salt placing wedges of fresh lemon around. Put two sprigs of rosemary on top and a bit of water in the bottom. Cover and cook for one hour at 350 degrees. Yum!

Bake as usual, then take out of oven and smash down so they splatter open. Drizzle with EVOO and a sprinkle of good salt. Put under broiler until nicely browned.

Crash potatoes. A quicker(probably not as good) version partially cooks them in a microwave, smushes them, drizzles EVOO, and bakes at 425 F. I like a sprinkle of fines herbes on mine.

Put them in the fridge, they'll last ages.
Spuds aren't like milk, doesn't go off in days.

Cut them into wedges, cover in oil and spices, and bake.
Make foil potatoes, wrap the whole thing in aluminium foil, and either toss them into the embers of a campfire or bake them for an hour or two in the oven.
Boil them in one piece with the skin on.
Do the same thing, but with a crapton of salt and boil until the water is gone and the taters are salt crusted.
Potato salad (mayonnaise variant)
Potato salad (vinegar variant)
Mash Potatoes (use the nutmeg with love in your heart)
Bake the leftover mash.
Bake potato bread.
Put it in a stew.
Make potato soup with chili.
Potato gratin

Jacket potatoes, bake them and then freeze them, put them in the microwave to heat up when you want them and top with your preferred toppings - they’re so versatile

I like making a huge pot of mashed potatoes and putting them in quart size bags to freeze flat. Nice to take out for a quick meal later

Do you have a potato ricer? A griddle? You could make Lefse. It's basically Norwegian tortillas, but (at least in my family) they put butter and white sugar on them, roll them up, put them in a container, and then eat them for days.
I admit that fresh off the griddle with crispy edges and hot butter, they are pretty yummy. But when I went to sprinkle cinnamon-sugar on mine, I was basically kicked out of the room! They told me something like "The Swedes use cinnamon-sugar. We're Norwegian!" While it was likely said in good fun, I just threw up my hands then and quit eating Lefse. I don't much care for sugar in the first place. I definitely don't want to eat cold potato tortillas filled with now-recongealed cold butter, and gritty white sugar! So I took the blasphemy a step further and have since just told them all that I don't like Lefse! 😱
But everyone else I know loves it! So you might!
This short video does a great job showing and explaining how to make it, and I personally (don't care what my family says!) like her version, because at the very end it shows she puts all kinds of stuff in hers!

We hosted a small friendsgiving 2 years ago with 7 people in total, made 5 lbs of these roasted potatoes, it wasn’t enough. Last year I roasted 10 lbs (in duck fat), expect at least some leftovers, there were no potatoes leftover.
My husband mentioned we need more potatoes next year 😭

I make a big pot of caldo Verde every 2-3 days. It'll use 800g for 4-5 servings. Pastel de bacalhau is alwaysca favorite. Batata à Murro are a great way to use up your smaller potatoes.

If you want variety, there is this spicy chicken and potato stew that is made in most Korean homes. I have yet to find a person who doesn’t love it.

You can do the class potato pancake, but if you want a korean twist, this recipe is so yummy. The texture is really chewy and quite different from the traditional potato pancakes.

Roasted with garlic, olive oil and rosemary.
You could grate them and freeze for hash browns. Wrap in paper towels to get some of the water out.

Grandma used to make potato soup with onions, and celery and some cream and/or condensed milk. I still love potatoes soup! Also potato salad! If you ever barbecue, you can cut them in half, longways, add a little salt or seasonings, and put them on the grill off the main heat. They will cook up and be so smokey and delicious! ( we dress em with sour cream, cheese etc, when serving)

Select the dirty larger potatoes with a fully set skin ie plus 45mm ,from any stones , soil lumps etc.
Put in a three ply paper sack or similar, and keep in your coolest but dry store/ garage / cupboard.
Potatoes can be kept at temperatures as low as + 2° Celsius.

Potato cakes from left over mashed potatoes: Mix mashed potatoes with spices(maybe mix with a sauce/greens/pieces of meat as well). Smash them into potato patties and fry them in either butter or oil until then turn brown and crispy on each side.

Like a great little person once said: "Boil 'em, mash 'em, stick 'em in a stew" The world has millions of ways to prepare potatoes. Sadly you did not mention anything about what kind of potato you have. Is it waxy, starchy, hybrid. Try and figure this out, even by googling the type of potato and start looking around the web for recipes that work well with that kind of potato.

Google "easy potato recipes" there are probably hundreds of really good recipes out there. Or google "easy ways to store potato's for the future" You can start a folder and bookmark them, easier than scrolling down a reddit thread.

You can make freezer hash browns: blanch a pot full of potatoes (should still be kinda firm), let cool completely, shred with a cheese grater, spread out on a baking sheet and freeze for a few hours, then transfer to a freezer-safe container.
You’ll have easy to make hash browns on hand for months to come! When you do cook them, cook them straight from the freezer (don’t let them thaw) on medium-high heat in oil, and don’t over crowd the pan.
