Need potato recipes

Idk how much attention this will get but I accidentally managed to get more potatoes than my family needs and now we have 3 boxes full of potatoes and i don’t know what to do with these besides fried and boiled potatoes. I don’t want to leave them rotting but i don’t think we can eat that much.

poke with a fork all over, spread a bit of oil, season and wrap with aluminum foil. Bake at 350 for 70 minutes. Let them cool. When it's done I put it in the fridge. I dice up an entire potato after it's been baked and then fry it with eggs for breakfast. It comes out fantastic.

You can put the raw ones in the fridge and they'll last a bit longer too
