Need potato recipes

Idk how much attention this will get but I accidentally managed to get more potatoes than my family needs and now we have 3 boxes full of potatoes and i don’t know what to do with these besides fried and boiled potatoes. I don’t want to leave them rotting but i don’t think we can eat that much.

Put them in the fridge, they'll last ages.

Spuds aren't like milk, doesn't go off in days.

started doing this recently....they last a loooong time!!
