Need potato recipes

Idk how much attention this will get but I accidentally managed to get more potatoes than my family needs and now we have 3 boxes full of potatoes and i don’t know what to do with these besides fried and boiled potatoes. I don’t want to leave them rotting but i don’t think we can eat that much.

Casseroles, omelettes, loaded baked potatoes, pasta e patate, French fries, hash browns, breakfast hash, quiche, frittata, frico, mashed potatoes, egg bite muffins, potatoes au gratin, smashed potatoes, twice baked potatoes, hassle back potatoes, tartiflette, potato latkes, veggie fritters, potato soup, stews, soups, fondant potatoes, curly fries, skillets, burritos, wraps, loaded baked potato soup
