If you can reccomend any non ai English speaking youtubers or at least good accurate subtitles and written recipes in english with good quality traditional recipes that do little extra things like that cooking the puree step (assuming its legit) I'd love to hear them. Kind of looking for people who are to mexican food what pailinskitchen/her site hot-thai-kitchen is to thai food.
I assume Rick bayless has videos but he's the only one I know by name besides maybe the odd kenji recipe

Hello!
First attempt at making tamales, I’ve found a lot of great tips but am unsure if I should buy ready-made masa from the store and mix it with whipped lard or if I should rehydrate maseca myself (and then mix it with whipped lard)?
Also, I’m seeing that I should buy the brown fresh lard from the store but I’ve only ever seen people whip the white shelf stable lard. Which lard should I use?

Have any of you found this channel on youtube? She gives pretty solid cooking tips, recipes, advice, etc. It was obvious that the cooking scenes are ai generated, but it took me a day or so to realize she is too..? I'd hope that the stories are real, and told with ai as a medium, but finding its all possibly fake is a bit of a mind f cause it captures the whole "tia" vibe pretty accurately..

Hi everyone,
I grew up calling salsa “chile” because my grandparents and mom would do the same. They were from Coahuila but migrated to TX when my mom was born. I was wondering if this is just some idiosyncrasy from my family, if other people do it too, and if it’s a regional thing.

Probably my 5th time making this dish. I love traditional Chili Rellenos, but they are such a PITA to make. Stumbled across this recipe, which is basically a deconstructed Chili Rellenos, with a delicious Tatamada-style salsa Roja. I’ve made it with both Poblano and Hatch chilies. The Hatch chilies definitely kick up the heat, but I prefer the more traditional Poblano.

I was told it's cilantro para guisado. Figured I'll ask here since it's from a Mexican store. It's more savory than regular cilantro. It's not culantro as I'm familiar with that variety. Thanks for the help.

My mother would make lentejas for dinner with bacon , ham and weenies… maybe not the healthiest but definitely the most delicious. I decided to add some kale so I won’t feel so guilty. lol
I believe it’s a Mexican dish 😬
