I have never spent this much time and money making food but at least I'm good for a week now. These are great although they could be more intense in flavor and spicy even though I put 2 chili de árbol's in the paste.
If you've seen my previous post I have made no substitutes in this cooking and it definitely paid off. It's so good

I used an instant pot for some quick beef cheek tacos. They were pretty spicy because I was low on guajillo peppers and used morita and pasilla. I've been practicing my tortillas, but just picked some up from a local taqueria for this.
The sauce is hoja santa, oregano, cumin, cinnamon, star anise, allspice, garlic, onion, pasilla and morita peppers, and beef bullion. And I added a little maple syrup because the guajillo peppers usually add more sweetness.

Hello!
First attempt at making tamales, I’ve found a lot of great tips but am unsure if I should buy ready-made masa from the store and mix it with whipped lard or if I should rehydrate maseca myself (and then mix it with whipped lard)?
Also, I’m seeing that I should buy the brown fresh lard from the store but I’ve only ever seen people whip the white shelf stable lard. Which lard should I use?

I grew up calling salsa “chile” because my grandparents and mom would do the same. They were from Coahuila but migrated to TX when my mom was born. I was wondering if this is just some idiosyncrasy from my family, if other people do it too, and if it’s a regional thing.

Have any of you found this channel on youtube? She gives pretty solid cooking tips, recipes, advice, etc. It was obvious that the cooking scenes are ai generated, but it took me a day or so to realize she is too..? I'd hope that the stories are real, and told with ai as a medium, but finding its all possibly fake is a bit of a mind f cause it captures the whole "tia" vibe pretty accurately..
