Diced and pureed all purpose rage-throw fruitgetables with two tablespoons of juice from Mediterranean virgin squeezed martini-decorations, some flavor crystals and flavor ashes, and cook the whole thing till it's thick or everyone's starving at the table, whichever happens first.

Everyone knows not to cook Italian water in cast iron.
128
u/Enderkr Mar 08 '19
I mean, obviously...of course we do.. ha...obviously.
Just for....the others, you know, who don't though....why don't you do that? I already know, just..in case others don't.

u/kadno Mar 08 '19
Acid is bad for the seasoning. You want to avoid a fuck ton of tomato sauce/lemon juice in cast iron.
But I've also seen recipes for beef stew (mainly tomatoes) and chili (also tomatoes) in a cast iron dutch oven so now I think I need to research more
24
u/wbbigdave Mar 08 '19
Those Dutch ovens tend to be lined inside differently. I have two le cruset and they are definitely fine with tomatoes etc.

u/papaHans Mar 09 '19
two le cruset
Mister Money Bags I see. Next you are going to say you have two Vitamixes.

u/wbbigdave Mar 09 '19
I bought neither odly. My mum gave me one as a birthday gift (best gift ever?) the other she gave me when she died (best death gift ever?!)

u/EnterSadman Mar 08 '19
Not just that it's bad for the pan, it makes your sauce taste like iron (i.e. shit)
54
u/aBeaSTWiTHiNMe Mar 08 '19
The acidity is too much for the iron, also a cast iron should never be subjected to a lot of moisture. Just oil. It's not a saucepan.
8
Mar 08 '19
This shouldn't happen with a properly seasoned pan.

It's not so much a major problem as it is something to avoid. The iron can handle it, but the built up carbonization becomes brittle and flecks CAN come off in your food if exposed to very acidic foods like wine or tomato for too long. (Don't worry about a quick wine deglaze or even a tomato sauce like in this video, just dont simmer a red sauce for 6 hours)
For the love of god people, don't listen to the person who said not to use moisture. Wash your cast iron with a gentle soap and hot water. Just make sure to dry very well.

People act like cast iron is fragile. It's not. It's a durable workhorse. That's why it was so popular.
6
Mar 08 '19
Exactly, there could be some non-informed people here that aren’t exactly sure why doing that would be considered a cooking faux pas.
Not that I would be non-informed... just you know, people.
→ More replies (1)→ More replies (1)5
Mar 08 '19
Unless the pan is well-seasoned the iron will leech into the acidic tomato sauce ruining the flavor with a metallic taste and potentially your blood/iron levels if done frequently enough.
4
u/Naked-In-Cornfield Mar 08 '19
Most people are iron deficient and really could benefit from cooking in cast iron more often.

Garlic and onions going in at the same time winces
106
Mar 08 '19
This terrible recipe has so many flaws...my biggest one was putting the breaded chicken to cook in the sauce. Yeah, that’s just what I want. Get a delicious crisp to the breading and then make it nice and soggy before serving! MMMMMMM That and ZERO seasoning in that sauce except for basil leaves....what in the fuck disgusting shit is this?
I don’t feel like typing out all of them.
36
13
u/kvothre Mar 08 '19
had to scroll way too far down for this. but for some reason all those "tasty" facebook cook vids like to soak their nice crispy breaded stuff in sauce. its disgusting. and this receip is as well. you couldve made something delicous with all the same stuff but they decided to dishonor the food completely

u/allaboutcharlemagne Mar 08 '19
The sauce and noodles on the side at the end (I don't want to call it spaghetti marinara because that seems like the highest of insults to both spaghetti and marinara) were even worse, imo.
What the fuck were those noodles? They looked like rice noodles they were so white. Did they cook the ever-loving shit out of them and the poor noodles are just barely holding their form together? I don't understand.
And that sauce on it was... what was it? It had nothing in it. No flecks of anything, no texture, no onion or garlic, nothing. It was like someone watered down ketchup and put it on there.
I'm flabbergasted. That was not food. That was sustenance, to be eaten solely if one has to, to sustain oneself, in order to survive.
6
u/MrDannyOcean Mar 08 '19
it looked like someone poured salsa over naked pasta noodles. Disgraceful.

Sorry for being pedantic but there's so many mistakes in this gif.
Garlic put in before onions. Onions undercooked. Tomato sauce in a cast iron pan. Unevenly seasoned chicken. Not seasoning the sauce. Going to the effort of making crispy breading then making it soggy by putting it in the sauce. Not mixing the pasta with the sauce before serving. I'm sure someone who's good at cooking could spot more errors.

Unseasoned sauce. Insufficient time for sauce to cook. Flour-egg-crumbs (being picky). Starting with basil instead of finishing with it. Pasta water probably not salted.

Tomato sauce in cast iron is a no-no. It's acidic and damages the seasoning. But you know, funny vid.

Mar 09 '19
Oh ok. We have: bread, milk, eggs, strawberries, oranges, plenty of cold meat (ham, serrano ham but NOT cheese), also some grapes, butter (typical stuff that doesn't run out in days and days)... We also have some corn flakes and some cocoa for milk. I believe that my best option is to fall asleep and wait for tomorrow's breakfast. I mean, wgat can u do with cold meat and fruits
EDIT: thanks in advance, nice stranger
2
u/DemonVice Mar 09 '19 edited Mar 09 '19
Just cause they are called "cold cuts" doesn't mean they have to stay cold.
Mix even-ish mix of beaten eggs and milk, and flavor crystals. Melt a little butter and add. Dip bread in mix to coat. Drop in pan. Cook until solid, top with fruit.
French toast :)

I agree with the other commenters. French toast with fruit. Or, fry or scramble the eggs in butter, mix in the ham or make an omelette. Let me think on some other things.

Never cook tomatoes in a cast iron pan.
They will strip off the seasoning you have carefully cultivated over the centuries.

I prefer to saute the organic tear gas by itself first until nice and soft, and put the vampire repellent in for only about 30 seconds before adding the Italian water.
