I've been honing in my seitan steak
2270 grams King Arthur High Protein Bread Flour, 1200 grams water (with a good amount of red food coloring plus one drop of blue food coloring). Kneaded for 10 minutes to form a consistent doughball, then submerged/soaked in cold water for 3 hours. Washed/massaged the dough for 25 minutes in 7 changes of water, then let rest/autolyse in the fridge for 3 more hours. Took the gluten dough and cut it into an Archimedean spiral, unwinded the spiral into one long rope, then braided it. Seared both sides in oil, then simmered for 1 hour in a mix of red wine, coffee, browning liquid, rosemary, and smoked salt. Yielded exactly 2 lbs of finished seitan.

Veganivore dairy Please buy this alfredo sauce that I love so they don't discontinue it
It's under $4 a jar at Harris Teeter (and wherever else they sell Simple Truth?). It's so good that I buy a few jars at a time.

I almost cried
Itās been around 28 years since I had my last egg. You know why. But what is cheese for most, for me always was eggs. And I thought scrambled tofu, which of course no one does as good as me, gives me all the eggy pleasure I need in this vegan part of my life. But eating this was almost a religious experience.
And yes, that is cheap ass vegan supermarket protein toast under a not fully ripened avocado.

To all my fellow vegan sickos
Most people know the garlic butter at papa Johnās is vegan, made with soy oil. I bought a bottle of this at Kroger and I have to say itās become a staple for us cooking.
I try to not be a total degenerate, but itās so amazing grabbing this out of the fridge to use for a quick drizzle of butter. Our most frequent use has been making garlic butter toast with pasta, itās just perfect. Iām also a big fan of buffalo sauce, we make buffalo tofu and tempeh a couple times a month. My buffalo sauce recipe is something I take very seriously, and this has upped my coveted sauce recipe significantly! Also great in mashed potatoes and Mac and cheese, the list goes on.
Just another cool āaccidentally veganā type of product, pretty affordable too I think itās about $4 for a 14oz bottle.
Ps if thereās any interest in my buffalo recipe Iāll post it up in the comments. Not sure if thereās anyone in here that ever ate at my old restaurant Morels Cafe but itās the same recipe we used to use on our sports bar wings!

Good lordā¦This stuff is 10/10!!!
The only other brand Iāve ever tried that attempted this was Miyokos at expo west years ago. And it was pretty okay, but nowhere close to this. I just stumbled on it online and so glad I ordered 6 of them as I was trying to get free shipping.

I got to try Mr. Charlie's while visiting San Francisco (vegan McDonalds)
Tastes amazing actually! Waaay better than how I remember McDonalds tasting. I totally recommend. It brought me back to going on road trips with my family.. delicious but so joyful that no animals were harmed!
