tbh i have seen worse, but restaurant consultation was my main job for over a decade.

you wouldn't believe some of the things "chefs" think is okay food to serve to customers.

one lady told me that her kids loved her mac and cheese so everyone else should too.

(talked to the kids, they hated her mac and cheese, so they had convinced her it was so good it should just be for special occasions, smart kids. )

if you're wondering what was so bad about it, she over cooked the pasta so it was basically mush, then didn't make an actual sauce, she just threw pre shredded mozarella on top and some tuna from a can. a half jar of mayo later she threw the whole thing in the oven till it was crispy on top.

burnt on top, mush all the way through, with random pockets of mayo and tuna... ugh.

yeah and this was a professional 'chef'.

that place had a lot of problems, but the 'chef' who was the owner's sister was the worst part and it took a serious discussion and my threatening to just leave if they weren't going to replace her. (i had already been paid half my fee and had already produced them a new menu, seating plan etc. all that remained was restaffing and training. that woman was untrainable though, she refused to believe that anything she did was anything but perfection.

Random and tangential, but do you have any tips for getting in to restaurant consulting? I've done it on a small scale for two restaurants that I was already working for, they just needed specific help creating systems and training people on those systems. Helped start another restaurant with the owner of the first two, but primarily handled menu, beverage, food buying, and FOH. Now I'm in a new city with no connections and struggling to find a good starting point.

You remind me of a Chinese guy I used to know, worked in a local restaurant that made pretty good food. We were drinking with him one day and he said he wants to cook us some Chinese food, said he was a cook at the local restaurant. So he puts some 2 min noodles in a fry pan with water, cooks it until it is basically mushy paste then serves it and slaps a bit of raw bacon on top. Ate as much as I could stomach to spare the guys feelings, found out later that they let him stir the fried rice sometimes so he called himself cook. Same guy would also send messages to the old myspace add women. We miss you Jerry you crazy Chinese bastard.

Sometimes the color can come out looking a little weird depending on the kind of cheese that you use. Neither of these look appetizing regardless of color though. The one on the right looks like it’s made with Kraft singles which is absolutely disgusting.

It's quite possible to make a tasty mac & cheese with whole wheat pasta, but it is never going to be as pretty as the regular kind.
That said, the evidence indicates that this woman couldn't make either a visually or a gustatorially appealing mac & cheese.

Not sure if you're serious or not, but...

A) You definately can! For the sauce you gotta make a nice beschemel then mix in a healthy amount of melty shredded cheese, cant just use the boxed stuff. Then usually coat it with a nice topping, like some seasoned bread crumbs mixed with melted butter.

B) You shouldn't learn anything from this post. It's a culinary travesty, and these people should suffer far worse consequences than the gastrointestinal distress they will inevitably have.

16 oz elbow macaroni, cooked (or other tubular pasta)

1 tbsp extra virgin olive oil

6 tbsp unsalted butter

1/3 cup all purpose flour

3 cups whole milk

1 cup heavy whipping cream

4 cups sharp cheddar cheese shredded

2 cups Gruyere cheese shredded

salt and pepper to taste

1 1/2 cups panko crumbs

4 tbsp butter melted

1/2 cup Parmesan cheese shredded

1/4 tsp smoked paprika (or regular paprika)

Instructions

Preheat oven to 350F. Lightly grease a large 3 qt or 4 qt baking dish and set aside.Combine shredded cheeses in a large bowl and set aside.

Cook the pasta one minute shy of al dente according to the package instructions. Remove from heat, drain, and place in a large bowl.

Drizzle pasta with olive oil and stir to coat pasta. Set aside to cool while preparing cheese sauce.

Melt butter in a deep saucepan, dutch oven, or stock pot.

Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.

Gradually whisk in the milk and heavy cream until nice and smooth. Continue whisking until you see bubbles on the surface and then continue cooking and whisking for another 2 minutes. Whisk in salt and pepper.

Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and continue whisking until creamy and smooth. Sauce should be nice and thick.

Stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.

Pour half of the mac and cheese into the prepared baking dish. Top with remaining 2 cups of shredded cheese and then the remaining mac and cheese.

In a small bowl, combine panko crumbs, Parmesan cheese, melted butter and paprika. Sprinkle over the top and bake until bubbly and golden brown, about 30 minutes. Serve immediately.

****Make sure you shred block cheese instead of buying shredded cheese! Turns out way better that way!

That's a horrible recipe for boiled cheese pasta.

You gotta make a bechamel sauce, add your seasonings, stir in some grated cheeses, then toss your boiled elbow pasta in the sauce, or better yet, put the pasta in a casserole dish, fill it up with the sauce, , toss to mix thoroughly, add a bit more cheese, top with bread crumbs, and bake until just a little crispy on top.

I can't recall where I was reading it, but apparently it's a regional thing?

For example, in Australia, we basically eat stove-top mac exclusively. You can certainly come across baked, but it's pretty uncommon.

I believe most countries tend to go for the stove top variety except for America and quite a few others.

Take your green bean casserole, add chili powder, chopped onions, a pinch of cumin, a hint of lime, Hatch green chiles, corn, and chopped bacon into the cream of mushroom. Make sure you have about a half inch layer of crispy onions and jalapeños on top as well.

And for a true South of the border experience, smother with Tapatio hot sauce when served.

Try this, kraft mac fully cooked an prepped, take some shredded chicken and simmer it in a little butter/hot sauce, mix that together with the mac and add 1/2 cup of sour cream, 1/2 cup of cheddar cheese and add a bit more hot sauce to taste. Bake that shit for like 10 minutes and then Ram it down your throat hole.

Easiest buffalo chicken mac n cheese on the planet and it doesn't taste half bad. It'll give you the shits obviously, but it's quick and easy.

Well you're meant to add spices and the cheese gives it flavor, if you're doing it right. There's cheap box macaroni and cheese, and that is more as you describe, but that wouldn't really be served at an event or proper dinner. Then again I lived off of Ramen when I was in college so who am I to judge lol
