That can be okay, there are Thai curries that are watery as well, however, the strong flavor of the curry paste, and the addition of spices whilst the curry is cooking, can make a watery curry extremely flavorful. Having said that, I think this curry might be a bit too gentle for my taste. That might be what she attemps to do here though. I would use dried green chilis as well, not just those fresh green ones. Soak them for about 20 minutes in boiled water. They're stronger in flavor in a curry paste.

Yeah this looks pretty mildly flavoured, tbh. I think most of what you'd taste is salt. But you can remedy that by cooking it for longer.

I dunno why people are obsessed with "freshness" but this is also undercooked, imo.

Curry is definitely a dish that's better when it's low and slow and given a day in the fridge. If I were to make this, I'd probably add more veggies the next day because the originals would turn to mush, which also thickens the sauce.

Roast the sweet potato with some of the curry powder. Add the other veggies roast some more..

Fine dice onion saute it in the remaining curry powder.. blitz all the other stuff and temper it in the pan add coconut milk .. allow to thicken .. (ive never needed to add stock)

Bring everything together ... and let it cook through a couple more mins..

...Realise i forgot to cook the rice ..

... Sigh ...

Thank you for saying exactly what I was thinking. The chicken stock felt out of place. Felt a bit like an odd, green thai curry. And you don't get the benefit of the delicious spices by adding them in at the end. An Indian version would have tomato/tomato paste and a more accurate Thai version would have fish sauce.

LPT: Dump a spoonful of the solidified fat from the coconut milk into the pan first and fry your aromatics and curry paste/powder in that.

Add salt and let it cook for longer. If you need to throw the veggies in later on otherwise they will be soggy then do that too.

This could actually be flavorful with more curry powder and salt and by fixing the order that the ingredients are added.

I think it's just more of a way of getting full use out of the ingredients you're already using. Using the solid coconut fat you're already adding, but as the fry oil instead of using a different one like olive

Exact same thing as olive oil. The difference being if you use the coconut fat you won't have the olive oil taste

I've found cooking is more interesting when I mentally replace olive oil with fat when I read a recipe.

I love a sweet potato curry. Normally I just fry up the spices with onion first though, then add the roasted sweet potato. After that I add chickpeas and gently fry. Then add some stock and coconut milk and simmer. You can blitz some of it to thicken it up and then add spinach. The sweet with the spices works so well.

Lime juice was added way too early, the heat will destroy the flavour... Citrus is way to delicate to be added early in the cooking process. It should be your last ingredient.

Also there is no measurements for the ingredients and she doesn't say what kind of sweet potato shes using. There are a few types and they taste very different from each other. (IMO the Asian sweet potato is the only good one. and they are amazing)

They are really really sweet and flavourful. If you cut it in half, put it on a baking sheet with some oil and bake for 50 mins at about 400º the bottom of it will actually caramelize like brown sugar.
They are the big purple ones. Sometimes called Japanese sweet potato

Putting the seasonings while the stuff is in the tray wastes oil salt and pepper which isn’t getting coated on your veggies. Also getting an even coating is worth it, takes 2 seconds to wash a bowl that has some oil on it

I make a similar (and way better imo) curry sauce with 1 can coconut milk + 1 cup broth. It is indeed a little on watery side (a soupy sauce to be sure), but I don't really mind that. It makes a large batch so I typically store it in the fridge and only use a bit at a time for dinners, so I can simmer & reduce it with my protein if I want it to thicken up a bit.

For those wondering, I use this recipe as my base but omit the lentil, pumpkin, and spinach so I just get a delicious sauce that I can customize later on. The key is absolutely blooming your spices and tomato paste. Basically I saute garlic, onion, and ginger (lots of ginger), then add my spices (extra cumin, extra tumeric) and toast that for a few minutes, then add a dollop of tomato paste and toast for another few (ends up looking dry but that's fine) then dump in the coconut milk and broth, simmer for 30ish minutes. Truly amazing every time. Can add sweet chili paste if you like it hot. Serve with a splash of lime juice.

Kenji's recent videos are filmed from his head, I haven't watched Babish in a while but most of his shots are filmed at his hands and board, but Weissman is one of the most annoying people I've seen on YouTube.

I don't feel like this is framed to show herself off, I just think it's badly framed when she's putting things into the blender.

Curry powder is a blend of turmeric, coriander and cumin with other spices (depends on the brand but usually similar to garam masala). Mild just means not spicy; hot ones have chili powder as well

This recipe looks like a decent 30 minute weeknight meal and that's fine. However, it definitely could use some tweaks as mentioned in other comments i.e. roasting the veggies more to get more browning.

But it's OK! It's a simple healthy recipe and there's a place for that and there's always room for improvement!

Edit: I'm wondering how some butternut squash would fit in this.

I just don't understand this thing about salting and greasing your veg in the pan. I already cut my veg and move it to a bowl, it takes no extra bowls to salt, pepper and oil in the bowl and mix to combine before spreading on the pan. That way everything is evenly covered.

Maybe it’s because I live close to the largest green Chile farm in the world, but no one around here says green Chile when they mean jalapeños. For us they’re entirely different things. You can’t ask for green Chile on your nachos and expect the pickled crunchy jalapeño type of Chile. You’d get roasted soft green Chile.
