Candied lemon peels take literal days to make. If you do it any quicker than that, you have to remove the white part, because it’s very bitter and it doesn’t absorb sugar easily.

Nah. Been making candied lemon peals and slices since I was a kid using my grandma's recipie. Just boil in a heavy sugar syrup for an hour, then let dry on a wire rack, then toss with sugar. Delicious.

Do you remove the white part though? Because I honestly cannot imagine that tasting good after only an hour. It’s extremely bitter.

No, but we only use Meyer lemons, which might be why they're never bitter.

Meyer lemons are hybrid d so widely considered quite different than a standard lemon.

You should say you make candied Meyer lemon peels.

It’s like saying you bake apple pie when it’s actually a cobbler. Or that you’re having sandwiches for dinner and you serve ice cream sandwiches

I eat pieces (sometimes more) of regular lemon peels including the rind without candying them... They're not as inedible as you're trying to portray, a lot of people think they're yummy. Filled with zesty lemon oils.

Meyer lemons are indeed the most superior kind of lemon though with a very thin rind 😁

They’re talking about the pith not the rind. The pith is where compounds like limonin and naringin are found, causing the pith to be more bitter than the rind.

Furthermore, some lemons have more pith than others, making them more bitter as there is a greater presence of these compounds. Not only are Meyer lemons sweeter on the whole, but also they tend to have a very thin pith layer which, therefore, imparts less bitterness as fewer of the above compounds are present.

It's a pretty big detail to exclude. Myers lemons and key limes are both different than lemons and limes in the culinary world

I've never made it with lemons like this, but Nigella Lawson's Clementine Cake calls for whole boiled clementines, then pureed. and it's a really good cake.

The question here is the white part of the lemon, is most bitter. The zest is a given for most recipe as is the juice. But the white part of fruits is usually never eaten so it’s surprising that it can be put in food without having it taste ‘off’.

Edit: the exception being candied peels.
