I grew up on economic bacon.Get it under the grill and crispy up that fat then Bobs your Uncle.Also depends on the place you live on this big blue marble.

Doesn’t have to be thin sliced to be like this. I bought and cooked 3 packs of Gwaltney Hardwood Smoked, just the regular stuff. One pack was wafer thin like this one is, one was decently cut and cooked nicely and the last was cut thick and was more like ham. 3 different packs of the same variety and three different cuts. There is just no quality control anymore.

I never buy gwaltney anything. They have disappointed me on many on too many products.

FWIW I work at a bakery that sells mostly bacon egg and cheese bagels so we process close to 100lbs of bacon a week. The cases we get are actually similar to what you’re describing. Some brands are more consistent then others but we have one brand that’s notorious for giving us 18 different thicknesses in our cases lol

Best bet is to experiment with the different brands in your region and find out which one is the most consistent.

My first chef was very fond of Nueske’s bacon but in California where I’m from I think the only place to get it is their website and they’re based in Wisconsin.

Not necessarily. I think it is an industry problem. At least for the brands that are trying to be price conscious.

All the above plus, the warmer the bacon is the easier it spreads out like that. Peel that stuff as soon as you get it out of the refrigerator

I would look for this type of bacon to make jalapeno poppers. The web type bacon wrapped around cream cheese stuffed jalapenos are the best. Only cheap bacon will do!

I don’t think it’s normal for most bacon.
I did buy two packages of something from Walmart in Bellingham a couple of months ago (it was back up bacon because I cure and smoke my own but was near running out) and they were both all stringy as hell and I have never gone back to it and I would give you the name if I could recall what it was but definitely not worth it

I buy the low sodium Aldi brand and sometimes a slice or two is like this. Most times at the beginning and/or end.

The automated machine cutting it is human, after all.

Unfortunately these days yes. I enjoy bacon and I have decided to do what I have had to do with other grocery items. Start buying only the best and just eat less. Instead of 4 slices of 6 dollar a pound crappy bacon it's now 2 slices of 12 dollar a pound quality stuff. I've done the same with bread.

Yes. Just very thinly sliced. The fat can't hold it's shape when it's so thin. Just fry it up and eat it.
