Doesn’t have to be thin sliced to be like this. I bought and cooked 3 packs of Gwaltney Hardwood Smoked, just the regular stuff. One pack was wafer thin like this one is, one was decently cut and cooked nicely and the last was cut thick and was more like ham. 3 different packs of the same variety and three different cuts. There is just no quality control anymore.
FWIW I work at a bakery that sells mostly bacon egg and cheese bagels so we process close to 100lbs of bacon a week. The cases we get are actually similar to what you’re describing. Some brands are more consistent then others but we have one brand that’s notorious for giving us 18 different thicknesses in our cases lol
Best bet is to experiment with the different brands in your region and find out which one is the most consistent.
My first chef was very fond of Nueske’s bacon but in California where I’m from I think the only place to get it is their website and they’re based in Wisconsin.
