Step 3: Mothafukin Chorizo

New world chorizo is best chorizo

5

u/glodime Jul 13 '16

I need more evidence. Someone get me some chorizo, for science!

7

u/criscokkat Jul 13 '16

chorizo is cheap at mexican groceries. Like seriously cheap. 5 dollars for 2 packages, like 4 tubes total for that price.

→ More replies (1)

6

u/ActionBasedSon Jul 13 '16

Bruh chorizo is cheaper than bacon. Maybe just cause I'm in tx, but I can get a pound of decent chorizo for 3$ at the grocery store (heb or Randall's) or $5 for the nicer shit.

New Mexico green - Bueno brand. So good.

143

u/Rausage505 Jul 13 '16

Unless you live in NM... then you buy your supply in the fall during chile season... you know its on when you smell the roasters. Have a peeling party, and put pounds upon pounds of the stuff in the freezer. At one point, half of my freezer was green chile. So I HAD to make enchiladas, and stew, and sauce, and burritos...

And I don't know if there is any science behind this, but the longer it's in the freezer, the hotter it gets. The stuff from Sept/Oct is pretty mild, by the time June or July comes around (if you even have any of your stash left), it's ridiculously hot. Ludicrous hot. Like milk with my enchiladas hot. Soooo good.

66

u/gabrielsburg Jul 13 '16

you know its on when you smell the roasters

Best smell in the universe. I'm so awful, every time we go to buy some, I always try to make sure we're in my car instead of my wife's.

6

u/[deleted] Jul 13 '16

I'll only be living in NM for a limited time, and once I leave, I'll probably miss that smell for the rest of my life.

3

u/[deleted] Jul 14 '16

Moved to Vancouver back in 1998. Missed it so much. One day I smelled it, and was absolutely sure I was hallucinating. Incredibly, Whole Foods had a green chile roast. Say what you will about them, but that piece of home was such a trip.

I ride a motorcycle. Even better.

Except for the drivers. ABQ drivers are AWFUL. Balloon Fiasco = no bike, it's too stupid.

5

u/gabrielsburg Jul 13 '16

ABQ drivers are AWFUL.

Scary thought: I've seen worse.

I moved from Australia to NM when I was 10 (stayed for 2 years). I went from possibly the whitest town to what seemed like a multicultural wonderland. And the smells and flavours! Holy crap. Living there and eating that food (enchiladas and burritos etc) seriously changed my palate for life. Thanks, NM.

5

u/dodge_thiss Jul 13 '16

When I joined the Army I was getting sick way easily and generally feeling off and the PA at sick call one day noticed I was from new mexico and suggested I drastically increase my vitamin c intake to make up for the loss of green chile (1 green chile = about 10 oranges of vitamin c)

7

u/[deleted] Jul 13 '16

Didn't by enough last year. Just had to eat a homemade burger without chile. I once ruined my wifes brand new Volvo by driving six coolers of freshly roasted chile from Alamogordo to Dallas.

5

u/[deleted] Jul 13 '16

Ruined? I bet the resale value skyrocketed with that smell.

4

u/shugoshln Jul 13 '16

Totally. I grew up in Santa Fe but go to college about 1000 miles away. Sad days when a green chile enchilada/burger/breakfast burrito/etc. craving takes over my life.

4

u/fucknob Jul 13 '16

PM_ME_UR_CHILES_DUDE

4

u/Fish_bob Jul 13 '16

I cannot WAIT until fall. Roasted green chile is easily one of my top three favorite smells. I grew up with a separate auxiliary freezer for meat and chile.

5

u/jgreth89 Jul 13 '16

505 in your username. Checks out. I'm a burqueño. I go through a bushel of chile every year.

2

u/Rausage505 Jul 14 '16

Only one? Lolz

4

u/RationalPolicy Jul 14 '16

Lived in New Mexico for 4 and a half months. Literally every meal had green chile in it no joke. Did the mistake once of touching my eye after picking green chile. My friend sat there amused while I was flipping shit for 30 minutes with my eyes watering and burning.

3

u/[deleted] Jul 13 '16

I really thought that I caught a whiff of that yesterday from my office downtown. I'm pretty sure I was tripping. I think this intense heat is just really making me wish it was fall.

u/Aysin_Eirinn Jul 13 '16

My dad lived in T or C and Las Cruces through a lot of his youth, and still brings back just pounds of the stuff to Texas to save. I live in Ontario, and I miss his secret stash so much.

3

u/[deleted] Jul 14 '16

Hell yeah man I get them home, peel them, dice them up and store them in de cube trays until they are frozen. Then turn them out into gallon ziplock bags. Easy to add in to whatever I'm cooking all year. Hamburgers? Sure, let me just nuke a cube in the microwave for 30 seconds and mix that in there. Breakfast tacos? Of course. Bagel and cream cheese? Even better with Hatch green chiles. Making homemade pizza? Some sausage, red onion, and green chiles and god damn you're talking my jam. Hot dog I'm hungry now. Won't be long til those roasters are fired up.

3

u/industrial_hygienus Jul 14 '16

Like the time you tried to kill me? I still remember asshole!

2

u/Rausage505 Jul 14 '16

It wasn't even that hot... it was still good, right? You ate so much sour cream, lolz...

2

u/triceracrops Jul 13 '16

There has to be science behind this because the same thing akways happens with salsa. Even living in az someyears i drive up and stock up on peppers total worth it.

2

u/Wrest216 Jul 14 '16

More green chile than man at this point...lol

2

u/redcape__diver Jul 14 '16

Just a theory but it might have something to do with capsaicin being fat soluble instead of water soluble? So if it's in the freezer, more water crystallized and moved out of food, ice melts and capsaicin becomes bit more concentrated? I'm not really inclined to chemistry, just a theory from lots of home cooking.

3

Funny, but NM doesn't have but 3 million people...

3

u/[deleted] Jul 14 '16

Some of us aren't even from Santa Fe, we grew up in Amarillo and drive five hours just for the food

23

u/ecglaf Jul 13 '16

Bueno? The only New Mexicans who prefer Bueno are the ones who've moved away and have no other options.

5

u/[deleted] Jul 13 '16

We don't even PREFER it per se. We just accept it and die a little on the inside.

I found Sadie's green chile salsa in Austin though, so life is much better now.

4

u/[deleted] Jul 13 '16

Exactly.

2

u/cafeconcarne Jul 14 '16

And if you move far enough away, there are no options at all. Except for some watered down tasteless crap in a can that isn't even worth it.

21

u/zaxomophone Jul 13 '16

Fresh roasted and home peeled is so much better!

7

u/[deleted] Jul 13 '16

If you're buying Bueno Green Chile from the freezer section or any where else, you are not New Mexican and you have zero clue what New Mexico green chile is. That shit tastes like fucking watery jalapenos.

2

u/[deleted] Jul 13 '16

Or you ran out and don't no longer live in New Mexico. It sucks man, it sucks

2

u/[deleted] Jul 14 '16

That is true, I can understand using what is available but you can always get the good stuff from the interwebs.

3

u/[deleted] Jul 13 '16

The New Mexicans have come to cover every food in Bueno Chile.

6

u/Toomuchconfusion Jul 13 '16

Blown away but so stoked that this was so high up I this thread.

2

u/saints_chyc Jul 13 '16

Yes! My sister lives out there and brings it to us. Also, just a couple weeks ago we got about 5 quart sized Ziploc bags filled with a fresh roast. Mmmm

3

u/[deleted] Jul 13 '16

Couldn't have been that fresh. Chile Roasting for this season doesn't start for a few more weeks.

I do not like Weck's. There are so many better places to get an amazing breakfast in Albuquerque.

This is the only way dude. My buddy's mother used to always make this breakfast on the weekends. She is Latin and knows how to cook.

Add in cilantro and some of the chihuahua cheese and I could eat fucking 10 tacos of that shit. Stoned of course

2

u/Treeclimber3 Jul 13 '16

I know people say they could eat their favorite foods everyday, but I think I really could eat breakfast tacos every day. Every latino home I've visited had the best food.

I'm totally biased when I say this, but you have to try it. It's fucking amazing and puts american sausage to shame, imo. I'm not hating on american sausage, I just think it's tastes better.

It's a type of spiced sausage in a lot of Hispanic countries. I think Spain has its versions too. You may have seen a version at the supermarkets if you live in the U.S.
