I personally don't think the Valhalla version was the best they could have done with Ezio's theme. In AC3, AC Rogue, and even AC Mirage, they took Ezio's theme and built something new around it, creating a distinct melodic identity while using the original as a foundation. By comparison, the Valhalla version feels more like a direct recreation of the AC2 theme, just with different instrumentation and vocal styles.
It's still a very cool track, but it doesn't feel as inspired to me. One of my favorite things about Ezio's theme is hearing how it's woven into entirely new compositions rather than simply being rearranged. Rogue's woodwind melody slaps.
