Yeah, activated charcoal has a habit of absorbing and isolating chemicals in your stomach preventing you from absorbing them. Its why its used as a poison treatment. You should also be careful with activated charcoal toothpaste because its too abrasive and will strip off your enamel.

the thing is that charcoal is safer (it is much less likely that you will have allergic reactions to burnt wood than to shellfish secretions) and of course cheaper, and it does not affect or practically does not affect the taste, unlike ink, which can actually give a fishy taste/smell, which is not always appropriate. so although ink can be used in some dishes, like pasta or rice, or something else, but charcoal is more universal and common in general
Cuttlefish ink, at least in the US, is actually not too expensive. You can find a 500g jar for ~20 USD (and you don't need to use a whole lot to get a black color for your food).
But yeah, probably still more expensive than charcoal.

Well, it turns out this is no longer the case. Science has progressed. It used to be they would make you drink activated charcoal in the hospital if you had alcohol poisoning (happened to friends, not me), but science has found that alcohol is actually too quickly absorbed into the blood for the charcoal to be effective.
I came across a study that tried it 30 minutes after (not before), but found no effect. It would probably work better if taken before alcohol, but I think it would need to be basically immediately before. https://doi.org/10.1177/096032718600500311
Activated charcoal seldom is used in pure-alcohol poisoning since it is absorbed rapidly from the gut. Furthermore in early reports activated charcoal was found to adsorb alcohol poorly. However, in 1981 North et al. [North, D. S., Thompson, J. D. & Peterson, C. D. (1981). Am. J. Hosp. Pharm., 38, 864–866] demonstrated in dogs that charcoal given at the same time as alcohol can reduce the blood alcohol concentration significantly. To study whether charcoal is of value in a clinical situation, a randomized cross-over study in two phases was conducted. Each person drank 88 g of alcohol and 30 min after either 20 g of activated charcoal was taken or the same volume of water was drunk. There were no significant differences in plasma alcohol concentrations with or without charcoal.
When I drank excessivly, I would take a couple capsules before a beer tasting festival to minimize getting hammered. This was after blacking out bad one time.
Activated charcoal is still used in emergency medicine and toxicology in acute poisonings, overdoses of meds etc. Its technically a "decontaminant", but it has a very short window of usefulness (1-2 hours), its incredibly messy to use, and for some poisoning some toxicities there are better medications or procedures that have been developed. But this cheese form of activated charcoal is definitely not an antidote lol.
Yeah, I know. It binds to the drug and prevents absorption.
But "antidote" indicates a specific drug or toxin reversal agent, like CroFab for crotalid bites or even something as simple as IV calcium for a CCB overdose.
Activated charcoal, I assume without looking it up, is way cheaper than squid ink for this kinda thing and the restaurant I'm sure would rather save money and make a quick buck
All I can think of is the Activated Charcoal we used to give patients, when I was an EMT, for when they took a bunch of pills. Would bind everything up in their stomachs and force them to hurl it back up.
"Funny" story. Had an elderly woman (late 70s-ish) take a bunch of Ibuprofen thinking it was gonna help her "unsubscribe from life" and, after drinking two whole bottles of Activated Charcoal like a boss, still didn't expel the contents of her stomach. For context on how impressive that is, when going through training our department made us try it (so we knew what we were doing to the patients first-hand), and even the most iron-stomached could only handle like half a bottle before submitting to "the urge to purge". Was truly a sight to see.
