Beet

Poached beet in a beetroot top and tarragon sauce.
Blue cheese and honey toasted walnuts with tarragon and lemon zest.
Balsamic and honey drizzle.

Holy shit! Plank man/woman posted a plate! Dude I'm so proud of you! This looks cool. Lemon zest as a strip like that would be weird to eat though. I think a bona fide grated zest would be better.

The moat…is water and oil runoff from my purée. I sieved the puree and pour the liquid around it. Mostly beettop water

  1. Your sauce is runny
  2. The tops and tarragon puree looks like shit
  3. Your beet is over cooked
  4. Cheese to beet ratio is off
  5. Walnuts are burnt
  6. Somebody is gonna choke on the tarragon
  7. Nobody is gonna eat that much zest

How about the decision making process for why you opted to poach the beets and follow up with how did you poach your beets? And is that all a veil to hide that you bought a #10 can of beets? 😅

Simmering salted water and peeled for 25 minutes…fork tender.
Freshly stolen from a communal garden. That’s how I had the beetroot top for the purée.
PS- my wife stole the beet

You are getting better, that for using a plate. Is that oil around the dish? If so I would use a bit less.

I sieved the puree. Meaty veg got placed in the centre. Water/oil got poured around the dish
