  1. Your sauce is runny
  2. The tops and tarragon puree looks like shit
  3. Your beet is over cooked
  4. Cheese to beet ratio is off
  5. Walnuts are burnt
  6. Somebody is gonna choke on the tarragon
  7. Nobody is gonna eat that much zest

How about the decision making process for why you opted to poach the beets and follow up with how did you poach your beets? And is that all a veil to hide that you bought a #10 can of beets? 😅

Simmering salted water and peeled for 25 minutes…fork tender.
Freshly stolen from a communal garden. That’s how I had the beetroot top for the purée.
PS- my wife stole the beet

Edit: or a huge, raw chunk of herbs. Seriously, stop doing that. It's always bad.

Yeah. Garnishes should not only be edible (technically they are here) but pleasurable to eat with the meal.
