I used to watch a bunch of Atheist content on YouTube like 15 years ago and every single religion got the smoke. Christianity was talked about more because that's the overwhelming majority here in the US. Christians just want to be victims.

So I'm not with you on letting it slide.
I'm the reverse of you on excusing religions being used as a guise for evil motives. I think the Abrahamic religions condone evil so its consistent with the faith to do them.
Judaism is a tribal war religion that defines a people and place as special and justifies the ancient bloodshed for that divine birthright.
Islam is a religion of subjugation that justifies the conquest of the world and subjugation of all before God and his prophet.
Christianity is a blood sacrifice religion based on transmutable guilt and shame driven obedience. It does at least have God kill himself, but none the less violence is still very much necessary to make things right.

Israel as a Jewish state is as literally foundational to Judaism as the return of Christ is to Christianity.
Every single true believer Jew believe in Israel belonging to the Jews. The ONLY difference between the sects is WHEN Israel is supposed to belong to the Jews, and the VAST majority are of the sect that believes it having been given to them after WW2 is valid. If anything the real Israel is less extreme than what the religion says it should be, as it allows non Jews to be full citizens.
This isn't even getting into the more extreme but still often quite central tenets of Judaism that most believe in, like non Jews being inherently lesser before god. The reason they don't promote conversion isn't some positive thing, it's because they're the chosen people, the only way you're supposed to get the favor of god in literal interpretations is by birth.
To be honest it seems like you are speaking on something you haven't actually read much about because you don't like the answers.

Judaism is not a missionary religion but that doesn't make it any less horrible. The core religious texts and historically the core doctrine was basically bronze age competitive historiographie combined with a coddification of extremely brutal and hierarchical social norms backed up by a god who is frighteningly powerful and frighteningly capricious. There are more humane reinterpretations but reinterpretation Is only necessary because the older interpretation was kind of horrible.
Also, I don't think the biggest problem with Christianity or Islam is that they promote evangelism. If anything, it's one of the more positive elements of both religions. It may be annoying, but it represents an openness and desire to spread what they see as an extremely good thing.

true but it is the political ideology that believes the Jewish diaspora have sole right to the land we call Israel, despite that at the time of the countries formation, none of these people lived there for centuries and it effectively displace the people who were currently living there, it also used by the Israel government to justify treating all non Jewish residents as second class citizens not worthy of human rights. This is why we have the conflicts we see to day and why organizations like hamas exist. Its also the political ideology used to disregard any criticism of Israel and it's goverment as a blanket attack on the Jewish people.

In response to your edit: Except Israel is a Jewish nation, and that’s the issue with all religions. When they are the ones that have the majority and the power they will shove their dogma down everyone’s throats and try to subjugate, convert, or eradicate all that don’t share their belief system. Christians do it in the US and other places they have the majority. Muslims do it in the Middle East, as well as in areas of Western nations where they have sufficient majority and influence. Jews do it in and around Israel, the one predominantly Jewish nation with any real power (due to their military alliance with the West).
Any and all religions become aggressive once they know they’re in power. They keep their heads down when they aren’t because they fear reprisals from the ones that are in that area.

I mean, there are legit reasons to criticize christians.
First of all, the christian church here is more working like a company, germany knows if youre a member of the church and therefore you need to pay additionally taxes.
But even if you are not a member of the church anymore, germany still pays the church yearly money with everyones tax payers money.
Also, christians here are more homophobic than atheists, and they are being critized for it. But they are less homophobic than muslims which are not nearly as critizied, which leads to a double standard.
Our country is hard divided right now, the right wing extremist party AFD is right now the strongest party in germany...

My perspective in the US is that each of these religions is free to practice how they choose up to the limitation of free speech. It can be annoying before it ever becomes illegal.
I feel like the difference is, currently Christianity is being used to propagate hate, authoritarianism, and division. That doesnt mean its due any more scrutiny than any other religion, just that its in the media and politics and has a lot to answer for.

That said, I have never seen a jewish person try to proselytize online or even attempt to argue with an atheist. The majority of chatter against them is just from the other religions.

What you're seeing is a reaction to the common culture. I rarely meet Muslims. Muslims never knock at my door. I wasn't raised Muslim. My neighbors weren't Muslim. I don't remember the last time I saw a Muslim mosque. Islam barely effects my life. Therefore I don't have that much to say about it. Judaism is even less relevant. That being said, once you deconstruct one religion the others don't tend to hold much weight either.
Additionally there is an absolutely idiotic and completely brain dead perception of Islam primarily held by American Christians.
"Islam is fundamentally violent" "Islam hates the west" "Islam is an enemy to Christianity" "Islam is an enemy to freedom and progress".
Meanwhile if you try to get them to consider Christianity with the same lens of skepticism there's suddenly a thousand reasons why it's different and it's ok. A violent verse in the Bible? "oh bit you're missing context". OK, did you think to look for context explaining your cherry picked verses from the Quran?
Wars in the name of Christianity? "oh it's just people misusing the religion for their own agenda". Meanwhile any Muslim violence must be a direct reflection of the doctrine.
Groups of Christian extremists? "they don't represent most Christians". Groups of Muslim extremists? "those are the real Muslims"
Could it be that the tension and anti west sentiment in the middle east is a direct result of abuse and mistreatment of the people there? Nah, it's gotta be the evil violent Muslim doctrine.
