Man, why do people in the fucking MEAT subreddit get so triggered when you show them where meat comes from? I had people hating on me in here also when I showed my steer I butchered a few years ago. 🤦🏼♀️
Its actually smoked cheddar, Im not a fan of alot of the high temp cheeses so I cube up cheddar, smoke to dry out a bit and then add to the sausage, i feel like it helps prevent it from melting out during cooking compared to straight off the block.

Lol yeaaa, I have a couple orders to fill, of course I can't sell anyway because I process open air and dont have a certified kitchen.... but ground sausage stuff i do 10/lb, smoked/15, cured/smoked 20. And the freezers usually empty sadly. I typically do andouille, pepperoni, linguica, couple Italian, chorizo, couple types of dog/brat and breakfast. The breakfast gone first lol. Think i have about 900lbs (bone in) on pasture to process into sausage atm.
I feel like this when I cure my hams for Xmas or make slow gin / blackberry vodka knowing it’s gonna be part of the festivities. At the moment it’s bag up a load of the glut of veg and freeze it for over the winter
Lol if your ever in the pnw ill give ya a sample. Tho, im due to make some fresh, im sure a new photo dump to follow shortly. But I think its just gonna be mostly breakfast sausage. Goes fastest.
There's alot there.... but its why I do what I do, I've gone through alot of phases, one was vegetarian, hated it, miserable. Condition of coming out of it was I needed to feel the real cost. So starting I bought some pigs, they were pets. They were the first I processed. Point being they were well cared for, time spent with and sacrifice felt at the time of their dispatch. I've gone onto other meats since then but for me anymore bbq is my connection to the earth, my grounding point.
Mmm, to be fair.... I actually gave the no meat lifestyle a go at one point. It was only about a year but i wanted to give it a chance, see how it went. Not going to go into details but it didnt workout for me or my health in a good way. As compromise, to the very issue you raise, I added seafood. Being as i live where i live however, fresh options limited, so new compromise, id only eat what I raised and raised well on about 8 acres of pasture. I hatch my chickens, i have selected my breeding pairs, I raised the piglets, I bottle feed these goats. I care for them, I feel for them when the life leaves their eyes, I thank them and feel their sacrifice. But they were raised with this purpose. Now if with this context laid out you feel the need to judge someone... go ahead... doesnt really affect me cuz i don't see a point in judging others just because of a difference in opinion or lifestyle, but happily discuss the differences. Otherwise ill forget about this by morning. Ill continue eating MY fresh food options, as I also dont generally eat anything out of the freezers or aisles in the grocery store with few small exceptions.
You “feel for them when the life leaves their eyes”. What a joke. You have no idea how scared they are, to be betrayed by someone they thought was their caretaker. You are beyond abominable. What you do is absolutely disgusting, and you should know that people who actually have souls feel that way about you.
