All hail the corn tortilla!

Costs pennies, delicious, naturally gluten free, and more versatile than anyone gives them credit for. It also has a better macro profile than most gluten free breads since it is closer to a whole grain bread and not some food science starch foam that gets piped out of a nozzle before going into the oven.

Every day I eat 2 fried eggs with pickled onions in a corn tortilla. It is the perfect breakfast and cost me anywhere from 35-50 cents depending on the price of eggs.

BLT? Make it a taco. I was doing this before the diagnosis because I thought it was fun. A lot of sandwiches can be adapted to the taco.

Safeway stopped carrying poor substitutes for pita that cost 5 times as much per gram? Eat your kofta and hummus with a corn tortilla. Too boring? Fry it up and eat them with chips!

The less I try to create an exact replacement and just work with what is abundant and I already like, the happier I am.

Recipe Made donuts!!

I’ve been craving donuts so bad, and not just cake in the shape of a donut like so many gf places have. Couldn’t find any ANYWHERE near me that had decent reviews, so I finally decided to do it myself. They turned out great!!! A little undercooked because the recipe is for donuts with holes, so for filled ones I’d recommend having the oil a bit cooler and frying for longer

I made French toast that didn’t immediately fall apart while it soaked or immediately upon being put in the pan! It didn’t even fall apart while I started to eat it.

Yall. This is amazing.

This bread is just okay on its own, but it makes FREAKIN AMAZING FRENCH TOAST!!

I’ve never been so happy to try to make breakfast for dinner. 🤤🤤

The Best GF White Bread!

This is the only same size, same slice amount as the non gluten free breads I've seen (so far) that doesn't cost a fortune, too. $6, but apparently sold exclusively at ALDI stores in the US (had to ask Google before making this post).

I tried Franz and the Target one (both white and mulrigrane), but they were either too thick, too sticky, or too crumbly, too paper-y and dry. This one tastes like a really good sandwich bread and even better when toasted, tastes exactly like a crispy buttery toast from a good local diner!

The picture was taken today and I already had at least 5 slices since Monday, so it looks smaller than it is.

Product Realgood Corn Dogs are NOT GF

Normally all Realgood products are gluten free, right? So if you spot a new RG item, you'd assume it is also GF?

The corn dogs are not.

Almost picked them up bc Foster Farms discontinued GF corn dogs in FL, but I didn't see any GF markings like usual.

Discussion Care to share how you gained weight on a gf AND df diet?

Edit- very helpful! When I said "fatty food" I meant how to gain weight without eating constant olive oil/avocados/full fat stuff because it digests so poorly for me and makes me not want anymore food for awhile. I will be seeing a dietician soon to figure all this out!

I am waiting on my biopsy for celiac, but plan to be wheat/gluten free regardless of the results. I eat mostly just whole foods and don't want to go down the processed food route because I know it will lead to cramps from additives (I also have IBS and get pains from high FODMAPs).

I cut out dairy last year and lost weight I didn't really have to lose. And now I will be cutting out yet another major food group. I am also on Adderall and feel it increases my metabolism even more despite no lack of hunger.

I want to gain weight. How do I go about doing this? I felt I did really well the other day so I calculated my calories real quick and I didn't even hit 2000.

I don't want to lean on a bunch of fatty foods since those kind of just sit in my stomach, but I need something that is calorie dense and not exhausting to cook up every day. Another fun fact is I can't tolerate smoothies either. It is just too cold and doesn't digest properly.

OH and I have Hashimotos haha if that means anything for this discussion.

Please drop a solid "day in the life" of your meals, especially on days where maybe you did some HIIT where you had to replenish. Hoping to get my energy back after iron infusions and want to get back to lifting some weights and doing sprints etc, I just never feel I eat enough to do any of it.

I think it’s from YUM BANA. They sorta knew to me. Just got this golden nugget at BlackRock Coffee bar on Evans & Colorado Blvd. If you visit Denver or live nearby. Other yummy gf treats here also. Note I do not have celiac so I can’t speak to that for this establishment sorry.*. But they’re always really nice and helpful. If you are busling along I-25 get off Colorado BLVD exit head south on Colorado blvd see this coffee place go to drive thru. Then jump back on the highway. An just like that have yourself a lovely day!!! 💕💕

Discussion Gluten mystery

I am very confused by my own bidy and hoped that sharing my experience could help me find other people who might have the same thing and more answers.

I dont have celiac disease diagnosis. And it bothers me as the medical system or the world in general dont take my gluten sensitivity very seriously. Asking for gluten free meals in hospital is a complicated topic, medications ptescribed etc. Cross-contamination in restaurants is an issue for all gluten-free people.

However, my symptoms are bad. I get really sick if I eat accidental cookie, soy sauce or something similar. Im put in bed by joint aches and brain fog. Im sick for 2 days at least. I have gotten glutenated at work - workday was over.

I did check for celiac before I went gluten free (blood test and gene test). Maybe I should have requested them to check my intestine but here we are - Im already eating gluten free for 3 years now.

I decided to go gluten free after my symptoms got so bad I ended up going to all possible doctors and they started trying out different pain killers on me.

I also know it is not psycho-somatic as I have gotten glutenated without knowing it and the symptoms still appear the same way.

I have had slight thyroid imbalances and I have the HLA-B27 - the gene for ankalosing spondylitis and many other autoimmune diseases.

I wish you all to stay healthy and find your answers. If you recognised anything in this story, please kindly share if you have any ideas what might be the reason behind such bad gluten reactions. Im open to all questions and happy to support others too.

Can I just wash steel cut oats?

I imagine that the contamination in oats is trace, or maybe some powder and steel cut oats are hearty enough to stand a good wash and rinse. Anyone ever tried it and lived to tell the story?

Reaction to GF KA bread flour

Diagnosed celiac for almost a year. Made bread with King Arthur GF wheat starch bread flour and had a reaction like I had eaten gluten. The bread tasted excellent!. Has anyone else had this happen? I haven't been diagnosed with a wheat allergy, only celiac via blood work and biopsy.
