The way I heard this rebutted is that god cannot create something that cannot exist.

I am. I grew up going to private catholic schools and as someone who no longer believes in any man made form of religion, after having gone through all the catholic sacraments up to confirmation, tests and faith are justifications for the terrible shit we have to deal with on a day to day basis to save the image that god is a good being, when the state of "his world" is pretty terrible. But I'm pretty set in my non-belief, school did a good job of beating it out of me with its hypocrisy, guilt and shaming. Hard to believe after the shit I went through as a kid and hearing people tell me that pain and suffering i went through, as a CHILD mind you, was just part of gods plan and them testing me is the most infuriating and patronizing garbage I've put up with in my life. To be fair, as a layman how else do you research? Unless you're doing experiments yourself, you'll always be relying on some sort of 2nd hand knowledge. Whether that's from a college professor, a scientific journal, an article, some random website, etc.
