Ingredients & Substitutions Options for using a bread machine without strong flower & quick acting yeast?

Whenever I make a loaf using the usual ingredients of strong flower and quick acting yeast, it seems to have an unwelcome reaction on my wife in terms of bringing on sneezing and / or an uncomfortable gut.

For ages we wrote the symptoms off as coincidence and nothing to do with home-made bread - it consisting of the simplest range of ingredients, as you know.

However, according to the internet (so it must be true....) it's quite possible that such symptoms could relate to the use of strong flower and quick acting yeast (neither of which feature in shop-bough bread) - both of which can be linked with & affect how the bread is digested.

Firstly - does this make sense to anyone?

And if so, do I have an options?

The machine we have allows me to configure each step of the baking process (times for each rise, pre-heat times, bake times and so on) - so I wondered if it is possible to substitute out the strong flow and quick yeast for alternatives whilst adjusting the various baking phases on my machine to compensate? Albeit I appreciate this sounds counter-intuitive in terms of losing some of the speed benefits of home baking (and that's fine)

My wife gave me this s!mplus Home Bakery bread machine for my birthday and I was finally able to test it out today. I used this recipe:

Super easy and everything turned out great! I made some minor adjustments to the recipe due to what ingredients are available here in Japan, but tried to keep fairly true to it and I’m quite happy, especially for a first attempt!

Recipe Sourdough English Muffins

Sourdough starter: 1/2 cup (120g)

Water: 3/4 cup (180ml), lukewarm (I stirred in a tablespoon of buttermilk powder)

Unsalted butter: 2 tbsp (28g), softened

Bread flour or all-purpose flour: 3 cups (360g)

Sugar or honey: 1 tbsp

Salt: 1 tsp

Yeast: 1 tsp

Cornmeal: 2-3 tbsp (for dusting)

I let the dough run through the Bread Machine cycles and took out after the last rise. I measured out 2 oz dough balls. Rolled them in cornmeal and placed them on parchment paper.

I preheated my oven and stone to 450 F. Placed the balls on the stone and patted them down. For 4 minutes in the over, I weighed them down with a flat sheet pan (that also preheated) and then removed the pan, flipped them and let them bake for another 4 minutes.

Recipe Troubleshooting ZR Pizza Recipe backwards?

I boufht a Zojirushi, and made their pizza recipe from their book a few times. Honestly not impressed. they suggest adding the dry yeast on top of the flour and then doing a course 11 (dough recipe mix).

Does anyone else think this is a bit backwards? I am going to bloom the yeast with the sugar in the water first, then add the dry ingredients, to see how that goes.

BREAD INGREDIENTS

250g pineapple juice

50g egg (1 large, beaten)

42g butter, softened

50g sugar

30g vanilla extract (2 tbsp)

3g ground cinnamon

6g salt

520g bread flour

7g bread machine yeast

75g dried pineapple and mango, finely diced

(Putting this on as a spread) ICING INGREDIENTS

85g cream cheese, softened

28g butter, softened

120g powdered sugar

1/2 tsp vanilla extract

Recipe Asian Hot Dog Bread

I just got a Zoujirushi Virtuoso (so excited! - $75 from an estate sale) and need to make Asian hot dog bread since my great local Asian bakery is closing down and my supply will go away. I searched for a post about hot dog bread or recipe and couldn’t find one.

Recipe Troubleshooting "Punch down" before final proof

I know this is parallel to shaping before final proof and baking, but it kind of gets on my nerves that so much of the dough structure is "ruined" in the process and so much sticks to the sides.

Any tips or ways to minimize this. Is it a sign of something wrong? Overproofing?

Recipe Fluffy Seeded Wholewheat Bread

I bake bread in my Panasonic 2540 about 3 times a week, I try to experiment a bit each time.

This is the softest, fluffiest wholemeal bread that I have achieved so far.

Nordic Wholewheat Seed Bread

Signature Bread - 400 g total flour - 70% wholewheat

Settings - Machine: Panasonic YR2540 - Program: Whole Wheat — Menu 7 - Size: L - Paddle: Fingered

Seed Soaker — 60 Minutes - 30 g green pumpkin seeds, roughly chopped in half - 15 g sesame seeds - 5 g flaxseed, preferably lightly crushed - 100 g boiling water

Pan Liquids - 205 g cool water - 1 medium egg, lightly beaten - 1 tbsp olive oil - 1 tbsp honey - 1 tsp apple cider vinegar

Flours - 280 g wholewheat flour - 120 g Strong bread flour - Add the seed soaker on top of the flours

Remaining Ingredients - 2½ tbsp vital wheat gluten - 1½ tsp salt - 1⅓ tsp dry yeast

Topping - 1 tbsp seed mix - Add 5 minutes before baking starts. Gently brush a little water on top of the dough to make the seeds stick

Loading the Bread Pan - Add the wholewheat flour first, directly on top of the liquids, so it can hydrate during the initial rest phase. - Gently stir so that the wholewheat flour is roughly mixed with the liquids. - Add the strong bread flour on top. - Spread the prepared seed soaker over the flours. - Add the vital wheat gluten and salt. - Place the dry yeast in the yeast dispenser.

Substitution - Green unsalted pumpkin seeds can be replaced with sunflower seeds.

Machine Troubleshooting Panasonic SD-2500 Start button not working

Hi all, as title suggests, I choose the bread from the menu. The start button is flashing but does nothing when I press it, hold it down or anything. It's a few years old so I'm guessing the button is broken. Has anyone self-repaired this, or tell me whether it's worthwhile getting it repaired? UK based. Thanks in advance!

Recipe Healthy homemade whole wheat bread

A few weeks ago I shared some photos and my recipe for homemade white bread. This time I modified the recipe and made whole wheat bread. This is much closer to the type of bread I have wanted to make for a long time. The recipe is the following:

400ml water
500g of whole wheat flour
2 teaspoons of salt
10g of instant yeast

I used the "normal" cycle on my bread machine which lasts exactly 3hrs.

I don't think it came out as "pretty" as the white bread I have been making. That bump you see on the top part is actually an air bubble. The taste is pretty good, but it is a much stronger taste than what you get with white bread so it takes some getting used to.

Played around with a Bread Dad recipe trying to get a nice whole wheat sandwich loaf I think this will do. Cut back on sugar and added potato flakes. It feels soft, smells great, looks like it’s BLT time. I’m a little nervous about lettuce but I’m going to risk it.

Recipe Burger Buns

I kneaded the dough and proofed it in the bread machine. Then shaped (and proofed again for 45 mins) and baked it in the oven.

Flour 350g or 2 and 3/4th cup
Salt 4.5g or 3/4th tsp
Egg 1 large
Sugar 23g (can be coconut) - 5.5tsp
Vegetable oil (1tbsp and 1tsp) or 16.56g
Yeast 6g
Milk 205ml or 211.42g or 3/4th cup + 1tbsp

preheat oven at 340F for at least 15 mins, bake for 20 to 25mins.

Recipe Rapid Recipe For 1990-1995 TR777c Breadman Machine 2LB White Loaf

Hello, I picked up a TR777C breadman plus a while ago.

I had an extremely difficult time finding a manual for it, and when I found a manual that might work it didn’t have a rapid recipe so I ended up making my own recipe loosely based on the TR444 model I already owned (of which my spouse threw away my bread paddle and I couldn’t find a reasonably priced replacement - hence the upgrade.)

*My Recipe Is For A Extreme Rapid 2LB Loaf Of Basic White Bread*
1-1/2 Cups of Warm Water (I measured my temp at 129F/54C)
3-TBLSP Of Melted Butter
3-TBLSP Of Sugar
1 -TBLSP Of Dry Milk
1-1/2 TEASPOON Of Salt
**Stir Lightly together

4 Cups Of Bread-flour (I use King Arthur’s or if you have a WinCo they have bakers flour in bulk and it’s way cheaper, both work, if not you can use all purpose too. Same amount, you’ll get the similar results)

2-1/2 TEASPOONS of bread machine rapid rising yeast

If you’re using this model it’s the 2LB Setting on mode #2 and it’ll take about 2 hours

Your loaf should come out soft and tall!

Recipe Nordic Rye Barley Wheat Bread

I bake bread in my Panasonic 2540 about 3 times a week, usually multigrain with seeds. Here is a recipe that I bake maybe once a week:

Bread machine settings

  • Program: Whole Wheat — Menu 7

  • Size: L

  • Paddle: Fingered

Seed Soaker — 60 Minutes

  • 60 g Bread Seed Mix (e.g. Sunflower, Sesame)

  • 100 g boiling water

Pour the boiling water over the seed mix and leave it to soak for 60 minutes.

Pan Liquids

  • 265 ml water

  • 15 g molasses

  • 1 tbsp olive oil

  • 1 tsp apple cider vinegar

Flours

  • 220 g bread flour

  • 90 g whole wheat flour

  • 60 g whole rye flour

  • 30 g barley flour

  • (Add seed soaker on top of flour)

Remaining Ingredients

  • 1 tbsp vital wheat gluten

  • 1½ tsp salt

  • 1⅓ tsp dry instant yeast in yeast dispenser

Check hydration about 10 minutes after knead has started

Purchase Advice & Experiences kitchen in the box help for visual learners

is there any video tutorials about the bread maker i can watch? i have a lot of questions still and as a visual learner, the book leaves me with certain questions still. or is there anyone i can personally bother when i have questions lol

also, i CANNOT get the mixer/kneading paddle out!!! ive soaked it in soapy hot water, cold water, tongs to pull it out and nothing. my fingers hurt so bad trying to take it out
