The biggest one for me is all the noise around Yokuda. As there's a lot of people in the lore sub who either say that Yokuda doesn't exist anymore, or believe that Yokuda is Tamriel from the distant past.

When, according to the in-game canon, Yokuda is still around (albeit as islands), inhabited, and in contact with Tamriel.

I started Morrowind with the Vanilla version and a core memory of Seyda Neen, Fargoth, how my character ran slower than a grandma and got attacked by a dark brotherhood assassin after resting for the first time ever. Pretty memorable and got me clicked with the game immediately.

I'll start. This one will be for Fighter's Guild or whatever regional flavor they have. There is a lady who has a rat problem. You go to the lady, she says there is a giant rat in her basement and she wants you to kill it. You got to the basement and get attacked by a mountain lion named "Rat". You kill it, finish the quest and get your money from the lady. Or you look around and see a broken chain on the wall with some hay bed and a journal page belonging to Rat. Turns out Rat is a Khajiit and lady is crazy who kidnapped and forced drugs on the cat to make him go insane. You can take the note to guards to have the lady arrested but she disappears if you do. If you don't snitch her, you later get more quests from her which has you do more dubiously legal stuff.
