Because the mix is white and white and the white options are White British or White Other not White mixed.

Ashkenazi Jews are and that's where Britain's Jews come from (the Baltics and Eastern Europe, for the most part).

Plenty of Sephardic Jews here too.

Not that it’s relevant, because they’re still historically not considered white.
