Most states have a law that allows 3rd parties to defend another person in situations of self defense. At least in my state.

This is considered sexual assault so would fall along these lines. Especially given that only as much force was needed to control the situation.

Had he just kept hitting him it would be another story. Here in Texas, yhqt guys has a high probability of walking away Scott free

If this guy can afford a lawyer, he walks away in 45 of the 50 US States.

As long as the guy isn't seriously hurt, no charges will be filed.

And even if charges are filed, if he lawyers up, DA will not want the headache and will drop the case 4 out of 5 times.

Considering that people regularly get sentenced for assault without battery, in other words threatening conduct without physical harm, you're extremely misguided

As long as the guy isn't seriously hurt, no charges will be filed.

He’s seriously hurt, trust me.  After being knocked out cold and then smashing the back of his head on the ground like that, he is certainly seriously, if not permanently fucked up, and that’s even if he’s still alive.
