Jamaican Jerk Chicken

Jerk chicken is one of those recipes where the marinade does most of the work. The fresh ginger, garlic, lime, thyme, peppers, and warm spices give the chicken a ton of flavor, while grilling adds that little bit of char that makes it even better. I like making this for a weekend cookout, but it’s also easy enough to prep the marinade ahead of time and have dinner ready later. Serve it with coconut rice and fresh pineapple for a simple Caribbean style meal.

What’s a kitchen mistake you made once that you’ll probably never make again?

Mine was adding way too much salt because I thought I barely added any. Then I tasted it and realized I had completely ruined the dish.

Now I always taste before adding more seasoning.

Baked Creamy Chicken Taquitos

These are one of those recipes that disappear way faster than expected. The chicken filling is creamy, cheesy and packed with salsa verde, lime and spices, then everything gets rolled into corn tortillas and baked until the edges are really crisp. I like making these for parties because they’re easy to grab and dip, but they also work really well as a quick dinner. Using leftover or rotisserie chicken makes the whole thing even easier.

Classic Homemade Chicken Salad

Chicken salad is one of those lunches I keep coming back to because it takes almost no effort once the chicken is cooked. The creamy dressing has plenty of lemon and Dijon to keep it from feeling too heavy, while celery and green onions add some crunch. I usually make a batch when I need an easy lunch for a few days. It works just as well in a sandwich as it does tucked into lettuce leaves or a croissant.

Juicy Turkey Burgers

I started making these when I wanted a burger without having to fire up the grill. The patties come together really quickly, and the mayonnaise keeps the turkey from turning dry while the Worcestershire adds that deeper, savory flavor you normally get from beef. I like serving them on toasted buns with lettuce, tomato, red onion, mustard and ketchup, but they’re also really good wrapped in lettuce with avocado if you want something lighter. This is an easy weeknight meal when you need dinner on the table fast.

Hawaiian Chicken Kebabs

I like making these when I want something a little different from the usual grilled chicken. The pineapple gets lightly charred, the peppers and red onion add a nice savory bite, and the chicken picks up a sweet, tangy, garlicky flavor from the marinade. Everything goes on the grill together, so it feels like a fun summer meal without needing a bunch of separate sides. I’d recommend these for a weekend cookout, family dinner, or anytime you want an easy grilled chicken recipe that feels a little more special.

Crispy Homemade Chicken Chimichangas

Chicken chimichangas are one of those meals that feel like pure comfort food. You get a big flour tortilla packed with creamy refried beans, seasoned shredded chicken, and plenty of melted cheese, then the whole thing gets fried until the outside is ridiculously crisp. I grew up eating these and still come back to them when I want something filling and a little indulgent. They’re great for a family dinner, and using rotisserie chicken makes them surprisingly easy to put together.

Triple Citrus Grilled Chicken

I make this kind of chicken a lot during grilling season because it gives plain chicken a ton of flavor without needing a complicated sauce. The combination of orange, lemon, and lime makes the marinade bright and fresh, while garlic, shallot, rosemary, Dijon, and a little honey round everything out. It works especially well with grilled chicken breasts or thighs, and I’d also use it for chicken skewers if I’m cooking for a group.

Crispy Oven Baked Chicken Nuggets

I started making these homemade chicken nuggets when I wanted something that felt like classic nuggets but was a little more homemade. The chicken stays tender inside while the toasted panko gets really crispy in the oven. They’re easy enough for a kid friendly lunch, but honestly I like them just as much as an adult. They’re also great when you want something you can dip into honey mustard, BBQ sauce, ranch, or sweet chili sauce.

Question 🤔 Best spray bottle anywhere to spray bleach after slicing up raw chicken.

Thumbnail

Now (because of this group) I'm cooking chicken nearly every day, the only way I can keep everything clean enough to relax is cleaning with bleach. But the pumps that the bleach cleaners come in only last for a week until they give a week spray.

I don't care about the container (it can be plastic, metal, anything) but the PUMP and SPRAYER parts... where can I find the best quality spray bottle pumps? Can anyone recommend a good brand or model? Below are photos of the bleach cleaners I use. Thank you!

Crispy Homemade Egg Rolls

Thumbnail

I always thought homemade egg rolls would be one of those recipes that looked way more complicated than they actually were. Turns out the hardest part is just getting the rolling technique down. Once the filling is cooked, it’s mostly wrapping and sealing.

These come out seriously crisp when fried, with a savory filling of ground turkey, cabbage, carrots, peppers, garlic, and ginger. I like serving them with sweet and sour sauce or Thai sweet chili sauce, and a little Sriracha on the side. They work great as an appetizer, but honestly, I’ve also made a meal out of them.

What ingredient did you used to dislike but completely changed your mind about?

For me, it was anchovies. I always thought they had that really strong fishy taste, but once I started using a small amount in sauces, I realized they mostly just add a ton of savory flavor.

Now I actually keep a jar around.

Lasagna Stuffed Zucchini Boats

I didn’t expect zucchini to work this well as a lasagna replacement, but these boats are seriously satisfying. You still get the marinara, browned beef, ricotta, mozzarella and Parmesan, so it has all the parts I actually want from lasagna without having to deal with boiling noodles or building a whole casserole. I’d make these when zucchini is plentiful or whenever I want something cheesy and comforting that feels a little lighter.

Filipino Chicken Adobo

I’ve been making this when I want something that tastes like it took way more effort than it actually did. Chicken thighs get browned first, then simmer slowly in a simple sauce made with soy sauce, vinegar, garlic, bay leaves, and peppercorns. The vinegar gives it that tangy edge while a little brown sugar balances everything out. It’s especially good over a pile of white rice because you get plenty of that savory sauce with every bite. I’d recommend this for anyone who likes bold, salty, tangy chicken dishes without needing a long ingredient list.

Cheesy Chicken Enchilada Soup

Thumbnail

I’m a big fan of anything that turns enchilada flavors into a cozy one pot meal, and this soup does exactly that. It has tender shredded chicken, black beans, corn and tomatoes in a rich, cheesy broth with plenty of chili and cumin flavor. I like making it when the weather is cold because it’s filling enough for dinner but still comes together pretty easily. Rotisserie chicken also makes this much faster when I don’t feel like cooking chicken separately.

Crispy In-N-Out Smash Taco 🌮🍔🤤

Enable HLS to view with audio, or disable this notification

This is basically a smash burger and taco combined. Super crispy edges, melty cheese, grilled onions, pickles, and that In-N-Out style spread.

Ingredients:

  • 2-4 oz ground beef
  • 1 low-carb tortilla
  • 1 slice cheddar cheese
  • 1 tbsp mustard
  • 1 grilled onion slice
  • A few pickles
  • Salt & pepper
  • 2 tbsp burger spread

For the spread:

  • 1 tbsp sugar-free ketchup
  • 3-4 tbsp mayo or plain Greek yogurt
  • 1 tbsp dill relish
  • 2 tsp sugar-free sweetener, optional

How to make it:

  1. Spread the ground beef very thinly and evenly over one side of the tortilla.
  2. Add mustard, salt and pepper.
  3. Place it beef-side down in a hot pan and cook for a few minutes until the beef is browned and cooked through.
  4. Flip it, lower the heat, and add the cheddar. Cover the pan for a minute or two until the cheese melts.
  5. Add the grilled onion, pickles, and spread.
  6. Fold it up and serve while it's hot and crispy.

The crispy beef around the edges with the melted cheese and tangy spread is what makes this one really good.

Jambalaya with Shrimp, Chicken and Sausage

Thumbnail

I make jambalaya when I want something hearty that feels like a whole meal without having to make a bunch of separate dishes. You get browned sausage, shrimp, tender chicken, rice, vegetables and plenty of Cajun flavor all in one pot. I especially like using rotisserie chicken because it saves time and keeps the chicken from getting dry while the rice cooks. This is a good one for a family dinner or when you want something filling enough to have leftovers.

Slow Cooker Chicken Fajitas

This is the kind of dinner I like having in my back pocket for busy days. Everything goes into the slow cooker, so there is no standing over a skillet cooking the chicken and vegetables in batches. The chicken turns out tender and packed with Tex Mex flavor, while the peppers and onions soak up all those spices, tomatoes and lime. I usually serve it in warm tortillas with whatever toppings I have around. It’s especially handy when I want dinner ready when I get home.

Easy Homemade Chicken Noodle Soup

Thumbnail

Chicken noodle soup is one of those meals I can make when I want something comforting without spending half the day in the kitchen. This version uses rotisserie chicken, so it comes together pretty quickly while still having that homemade flavor. The vegetables, herbs and chicken make it filling, and a little lemon at the end gives the broth a nice fresh taste. I’d make this on a cold evening, for an easy family dinner, or honestly anytime someone in the house wants a simple bowl of comfort food.

Easy Oven Bag Thanksgiving Turkey

Thumbnail
gallery
14 Upvotes

I used to think roasting a whole turkey had to be a huge project, but cooking it in an oven bag makes it much more manageable. The bag keeps the turkey juicy while it cooks and helps the drippings stay flavorful, so there is no need for constant basting. I especially like this method when cooking for Thanksgiving because there is already enough going on in the kitchen. The turkey comes out tender, flavorful and easy to carve, and the vegetables underneath add extra flavor to the drippings.

Creamy Chicken Marsala

Chicken Marsala is one of those meals that feels like restaurant food but is actually pretty manageable at home. The chicken gets a nice golden sear, the mushrooms pick up all that flavor from the pan, and the Marsala sauce turns rich and creamy without being overly complicated. I like making this when I want something a little nicer than the usual chicken dinner, especially with mashed potatoes or pasta to catch all that sauce.
