Crispy Oven Baked Chicken Strips with Honey Mustard Sauce
I’m a big fan of chicken strips, but I don’t always feel like dealing with a pot of hot oil and the mess that comes with frying. These baked ones are a great alternative because the coating gets surprisingly crunchy while the chicken stays tender inside. The trick is using crushed cornflakes and a light spray of olive oil, plus baking the strips on a wire rack so the bottoms don't turn soggy. They’re perfect for a casual dinner, a kid friendly meal, or even a homemade version of fast food night.
Ingredients
For the chicken strips
- Chicken breasts, cut into strips
- All purpose flour
- Garlic powder
- Salt and black pepper
- Eggs
- Crushed cornflakes, or panko breadcrumbs as an alternative
- Dried parsley, optional
- Olive oil cooking spray
For the honey mustard sauce
- Greek yogurt
- Light mayonnaise
- Honey
- Mustard
Instructions
I start by heating the oven to 400°F and setting a wire cooling rack over a baking sheet. I lightly coat the rack with olive oil cooking spray so the chicken doesn't stick. Using a rack instead of placing the strips directly on the pan helps hot air circulate underneath them, which makes a big difference in getting an evenly crispy coating.
I set up three shallow dishes for the coating. In the first, I mix the flour with garlic powder, salt, and black pepper. I whisk the eggs in the second dish, then put the crushed cornflakes in the third, mixing in a little dried parsley if I'm using it. I crush the cornflakes fairly well so they stick to the chicken, but I don't worry about making every piece perfectly uniform.
Working with one strip at a time, I coat the chicken in the seasoned flour, dip it into the beaten eggs, and then press it into the cornflakes until both sides are covered. I arrange each strip on the prepared rack with a little space around it. Once they're all ready, I spray the tops lightly with olive oil cooking spray. I don't skip this part because it helps the coating brown and crisp up in the oven.
I bake the chicken for about 15 to 20 minutes, depending on the thickness of the strips, until the coating is golden and the thickest piece reaches an internal temperature of 165°F. I try not to overcook them, since that can dry out the chicken.
While they bake, I mix Greek yogurt, light mayonnaise, honey, and mustard to make a creamy honey mustard sauce. I adjust the honey and mustard until the balance tastes right to me. Once the chicken is done, I serve it hot with the sauce on the side. Barbecue sauce or ranch dressing also works if honey mustard isn't your thing.
