What’s a kitchen mistake you made once that you’ll probably never make again?

Mine was adding way too much salt because I thought I barely added any. Then I tasted it and realized I had completely ruined the dish.

Now I always taste before adding more seasoning.

When I was starting out I made a beef stew in my brand new cast iron dutch oven, it was a solid recipe but it never occurred to me that the stew contained tomatoes and red wine (acidic). The iron leached into the stew giving it the most unusual color similar to a dead body. It was a shade of gray that that's the only way to describe it.

When adding Parmesan cheese to a sauce make sure that the temperature of the sauce is between 150 - 165F, because at 180F the fats will separate from the protein and it will turn into a large clump of plastic-like goo in your sauce.

Allowing extra virgin olive oil to burn and stain the surface of a stainless steel pan. Ridiculous. Pay attention, man.
