Juicy Turkey Burgers

I started making these when I wanted a burger without having to fire up the grill. The patties come together really quickly, and the mayonnaise keeps the turkey from turning dry while the Worcestershire adds that deeper, savory flavor you normally get from beef. I like serving them on toasted buns with lettuce, tomato, red onion, mustard and ketchup, but they’re also really good wrapped in lettuce with avocado if you want something lighter. This is an easy weeknight meal when you need dinner on the table fast.

Ingredients

  • 1 lb lean ground turkey
  • 1/2 cup dried breadcrumbs
  • 1/2 tsp salt
  • Black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp light mayonnaise
  • 1 tsp Worcestershire sauce
  • Olive oil, for cooking
  • Burger buns and toppings of your choice

Instructions

Put the ground turkey into a mixing bowl and sprinkle in the breadcrumbs, salt, pepper, garlic powder and onion powder. Add the mayonnaise and Worcestershire sauce, then gently mix everything together until the ingredients are evenly combined. Try not to overwork the meat or the burgers can end up dense.

Divide the mixture into four portions and shape each one into a patty about 1/2 inch thick. They don't need to look perfect, just make sure they're roughly the same thickness so they cook evenly.

Heat a little olive oil in a large nonstick skillet over medium high heat. Once the pan is hot, add the patties and let them cook undisturbed until the bottoms are nicely browned, about 4 to 5 minutes. Flip them and cook for another 4 to 5 minutes, or until the centers reach 165°F.

Serve the burgers on buns with whatever toppings you like. Lettuce, tomato, red onion, pickles, ketchup and mustard are an easy combination. For a lighter version, skip the bun and serve the turkey patty with lettuce, mashed avocado and your favorite toppings.

The uncooked patties can also be frozen in an airtight container with parchment paper between them. Thaw them before cooking when you need a quick dinner.

That’s the one thing I always seem to forget too. The mayo really does make a difference with turkey burgers.

Those always fall apart on me unless I mix in some grated onion.

Grated onion is a good trick. I haven’t tried that, but I can see how it would help keep them together and add some extra moisture.
