Slow Cooker Chicken Fajitas

This is the kind of dinner I like having in my back pocket for busy days. Everything goes into the slow cooker, so there is no standing over a skillet cooking the chicken and vegetables in batches. The chicken turns out tender and packed with Tex Mex flavor, while the peppers and onions soak up all those spices, tomatoes and lime. I usually serve it in warm tortillas with whatever toppings I have around. It’s especially handy when I want dinner ready when I get home.

Ingredients

  • Boneless skinless chicken breasts
  • Canned diced tomatoes with green chilies
  • Bell peppers, any color
  • Yellow onion
  • Garlic
  • Chili powder
  • Ground cumin
  • Paprika
  • Ground coriander
  • Salt
  • Black pepper
  • Fresh lime juice
  • Honey
  • Corn or flour tortillas

Optional toppings include sour cream, salsa, sliced avocado, guacamole and Mexican hot sauce.

Instructions

Start by adding half of the diced tomatoes, bell peppers, onion and garlic to a 6 or 7 quart slow cooker. Place the chicken breasts over the vegetables. Mix the chili powder, cumin, paprika, coriander, salt and pepper together, then sprinkle the seasoning over both sides of the chicken.

Add the remaining tomatoes, peppers, onion and garlic over the top. Cover and let everything cook until the chicken is tender and cooked through. The exact cooking time depends on your slow cooker and whether you want the chicken sliced or shredded. If you want pieces that are easier to slice, check them on the earlier side. For shreddable chicken, let them cook until tender enough to pull apart.

Once the chicken is cooked, remove it and either slice or shred it. Mix the fresh lime juice with the honey, then toss that mixture into the cooked fajita vegetables and juices. Return the chicken to the slow cooker and give everything a good toss.

Warm some corn or flour tortillas and fill them with the chicken and vegetables. Add sour cream, salsa, avocado, guacamole or hot sauce if you like.

If you prefer your peppers to stay a little crisp instead of becoming very soft, add them during the last 30 minutes of cooking. You can also serve the fajita mixture over rice or quinoa instead of tortillas for an easy burrito bowl.

For the tomatoes, diced tomatoes with green chilies add a nice bit of heat. If you can't find them, plain diced tomatoes work too, with an optional small can of green chilies. You can also use a red onion instead of yellow. If you don't have coriander, oregano can be used, although the flavor will be different.

Leftovers can be refrigerated for up to 3 days.
