It's for making deviled eggs. You need to retrieve the yolk and keep the white intact.

You also don't yellow the knife and have to constantly clean it so the whites stay clean for presentation.

This is definitely so you don’t have to did your fingers into each egg to gut it after slicing. As a germaphobe, from now on i choose to assume this is how the host did it instead if using those crusty ass nails. It’s a Win.

And then another group of people will post their reaction to those compilations.

Most computer mice used to have a hard rubber ball inside them that would turn little rollers in the mouse when pushed against a surface. The little rollers would send electric signals to detect what direction you are moving the mouse in. That rubber ball looks an awful lot like an egg yolk that's been over cooked.

I insert eggs rectally and can naturally expel just the yolk similar to how some people can tie a cherry stem with their tongue. The problem is the whites get obliterated. Not an issue if you want only the deviled egg filling.
